Easy Valentine’s Day Peanut Butter Cookie Cups recipe. This simple dessert idea is made with reese’s cups, and make a great sweet treat.
Does anyone else find random chocolates and candies lying around their pantry?
Whenever chocolate goes on major discount, I buy a lot. Then I forget how much I really bought and find it a couple of months later. That’s what happened with these Pink Reeses cups. But luckily for me, this gave me an excuse to make these Valentine’s Day Peanut Butter Cookie Cups. My first step whenever I find ingredients that need using is bake cookies. Typically I make classic cookies, but it is so close to Valentine’s Day, I needed to go with that theme. Adding these to my long list of cookie recipes on this site already.
And for all the peanut butter lovers and the chocolate lovers out there, this simple recipe is for you too. This is the perfect sweet treat to share with a loved one, or just save for yourself.
Valentine’s Day Peanut Butter Cookie Cups Ingredients
You just need a couple of simple ingredients to make these little cookie cups. All you need is:
- all-purpose flour
- baking soda
- salt
- butter
- smooth peanut butter
- white sugar
- egg
- vanilla extract
- Pink Miniature Reeses cups
Equipment
You will need the following things to make these Reese’s cookie cups:
- Mini muffin pan: This one is a non negotiable. However, there is no need to get cupcake liners to place in the mini muffin tin.
- Small cookie scoop: This is more of a want than a need. It makes portioning out the peanut butter cookie dough a lot easier, but if you can eyeball 1-inch balls you don’t need this as much.
Tips
Storage: There are 3 ways that you can store these homemade cookies:
- Room Temperature: These keep well stored in an airtight container on the counter for up to 1 week. I like layering them with a sheet of parchment paper in between layers.
- Fridge: You can also store them in an airtight container in the fridge for up to 2 weeks.
- Freezer: These cookie cups keep well in the freezer too! You can freeze them for up to 3 months.
Use chilled peanut butter cups. This will prevent the mini Reese’s peanut butter cups of melting when trying to place in the center of each cookie cup.
Variations
Use more obvious Valentine’s day decoration. Mine is basically Valentine’s day because it is pink. If you find some White Chocolate Reese’s Peanut Butter Hearts, those would work great in place of the mini peanut butter cups. Or adding some festive sprinkles on top would help jazz these Reese’s cookies up.

Valentine's Day Peanut Butter Cookie Cups
Ingredients
- 1 1/2 cups all-purpose flour
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup smooth peanut butter
- 1 cup granulated sugar
- 1 large egg
- 2 tsp vanilla extract
- Pink Miniature Reese's Peanut Butter Cups
Instructions
- Preheat the oven to 350˚F.
- In a medium bowl, mix together the flour, baking soda and salt.
- In a separate bowl, beat together the peanut butter and butter until smooth. Add the sugar, egg and vanilla until light and fluffy.
- Slowly add in the flour mixture and mix until fully combined.
- Roll dough into small balls and place in cavities of a mini muffin pan.
- Make an indent in the center of each dough ball and place an unwrapped Reese’s peanut butter cup into each.
- Bake in preheated oven for 8-10 minutes.
- Remove and let cool on wire racks.
