For all the Canadians out there, Happy Canada Day!
Since it’s a holiday and all, you would have been expecting me to be outside under some giant umbrella sipping on a red and white drink of some kind. But what you imagine is usually nowhere near reality.
Instead, I ran a bouncy castle station for very small children. In the scorching heat. All day.
Before you think “aww.. how could you be complaining about that? What’s cuter than little kids jumping up and down in a fully inflatable room?” well let me tell you that this day wasn’t all smiles and cotton candy.
Little kids losing their parents, children bouncing on other children’s faces on the bouncy castles, tears, tears, and oh so many tears.
So when I finally got home, I was exhausted. And I needed something. Some kind of treat that I could whip up without turning on my oven.
Enter these cheesecake balls. Anything cheesecake gets my attention, but when you add some pecans and toffee.. oh baby, things get crazy. These are exactly what anyone needs after a long, stressful, teary day. Trust me.

Toffee Cheesecake Balls
Ingredients
- 8 oz cream cheese
- 2/3 cup graham cracker crumbs
- 1 1/2 cups chocolate chips
- 1 Tbsp shortening
- 3 Tbsp pecans, finely chopped
- 8 pieces toffee, melted
Instructions
- Mix together the cream cheese and graham cracker crumbs until fully combined. Form into 1 tablespoon balls and place on a baking sheet lined with wax paper. Freeze for at least 15 minutes.
- Boil 5 cups of water and pour into a medium bowl.
- Place the chocolate chips and shortening into a smaller bowl, and place it into the bowl full of water. Mix the chocolate chips and shortening until the mixture is smooth, making sure not to let the water mix in with the chocolate mixture.
- Take the frozen balls out of the freezer and dip them in the chocolate mixture. Place the dipped cheesecake balls back on the waxed paper. Quickly sprinkle the cheesecake balls while the chocolate is still wet with the pecans.
- In a microwave safe bowl, melt the toffee. Drizzle it on the cheesecake balls, and freeze until hard.

What possessed you to run the bouncy castle? Face painting is much easier. A rainbow and a sun are all you need to draw. But luckily you chose a very good dish to soothe yourself. For that I thank you!

I would NOT enjoy that bouncy castle experience at all! You must have a ton of patience. The cheesecake balls look amazing.
Bouncy houses are fun, I can imagine gobbling one or all of these after a workout like that.
