Taro Mug Cake

There is nothing I love more than a good mug cake. The best part about them is how quick and easy they are to make.

Ever since we made the transition from 1 to 2 kids, I have been looking for quick and easy fixes of some of my favorite foods. I have been craving a lot of Chinese food lately, and ordering in a lot of dim sum. But what I really crave is taro bubble tea. And because it is kind of a process to make bubble tea at home, I decided to make a Taro Mug Cake instead.

I found my taro powder at a local Asian grocer, but you can find the one I use on Amazon.

​With zero prep time, I love making this mug cake in between my children's naps. It's almost dangerous to have this mug cake recipe because now I want to make it every day.

Taro Mug Cake Ingredients

This Taro Cake in a mug is only made with 7 ingredients. All you need is:

  • all purpose flour
  • taro powder
  • white sugar
  • baking powder
  • hot water
  • neutral oil (vegetable oil or canola oil are preferable)
  • vanilla extract

Tips

Make a gluten free mug cake. ​Instead of using all-purpose flour, try 1-1 gluten free flour or even rice flour.

Switch up the flavor to your personal preference. I like substituting coconut oil for the oil and warm coconut milk for the hot water. You can also add in your favorite mix-ins, such as white chocolate chips or shredded coconut. Top it with a scoop of vanilla ice cream to make it extra decadent.

Make sure you use a microwave-safe mug. ​If your mug is not meant for the microwave, the cake batter will cook unevenly. The middle will be undercooked and the outside would be overcooked. If you don't have a microwave safe mug, try using a small bowl instead.

Keep an eye on your mug cake. ​Because microwaves vary, the cooking time might be different on different models. Once the cake starts overflowing, press pause on your microwave, then resume once the cake has deflated a little.

Ingredients

  • ¼ cup all-purpose flour
  • ¼ cup taro powder
  • 1 tablespoon granulated sugar
  • ¼ teaspoon baking powder
  • ¼ cup hot water
  • 2 tablespoon oil
  • ¼ teaspoon vanilla extract

Instructions

  • In a large microwave safe mug, mix together all of the ingredients until smooth.
  • Microwave for 1 minute. Remove from the microwave to see if it's done. If the top is still not set, microwave for an additional 15 seconds. Allow to cool for a couple of minutes before eating.
