This easy Peanut Butter Chocolate Chip Baked Oatmeal uses only pantry essentials, making it the perfect meal prep breakfast for busy mornings.
My toddler’s favorite breakfast food is baked oatmeal. He requests it every night before he goes to bed. It’s either “mama, bake something while I’m sleeping”, or “can you please make me baked oats for tomorrow?”. And every night, I feel like I need to comply because who am I to deny my son a healthy breakfast?
And yes. I do consider this a healthy breakfast. Even though it seems like it is littered with chocolate chips, this is in fact a pretty healthy chocolate peanut butter baked oatmeal. It is made with super simple ingredients and a whole lot less sugar than your typical breakfast. Plus, it is great as a meal prep for when school starts. I know that I am going to be making this almost daily then. Although, I am basically making it daily right now, so I guess not much will change.
Peanut Butter Chocolate Chip Baked Oatmeal Ingredients
This baked oatmeal recipe is just made with pantry essentials. All you need is:
- quick oats
- eggs
- milk
- peanut butter
- white sugar
- vanilla extract
- baking powder
- chocolate chips
Tips
Storage: Store any leftover baked oatmeal in an airtight container in the fridge for up to 5 days.
Make it vegan. To make this oatmeal vegan, you will need to swap out the eggs, milk and potentially the chocolate chips. For the egg, just make a flax egg by mixing 1 Tbsp ground flaxseed with 3 Tbsp water in a small bowl, and allow it to sit for around 5 minutes. My favorite non-dairy milks for this recipe are either oat or almond milk.
Swap out the peanut butter. You could use any other nut butter, or even a sweet butter. Some suggestions would be almond or cashew butter, Nutella or even Biscoff spread.

Peanut Butter Chocolate Chip Baked Oatmeal
Ingredients
- 2 1/2 cups quick oats
- 2 large eggs
- 1 1/2 cup milk
- 1 cup creamy peanut butter
- 1/3 cup granulated sugar
- 1 tsp vanilla extract
- 1 tsp baking powder
- 3/4 cup chocolate chips plus more to top
Instructions
- Preheat the oven to 350℉. Lightly spray a 9x9 inch baking dish with cooking spray and set aside.
- In a large bowl, mix together the oats, eggs, milk, peanut butter, sugar, vanilla and baking powder. Fold in the chocolate chips.
- Pour the mixture into the prepared pan and top with additional chocolate chips.
- Bake in the preheated oven for 35-40 minutes. Allow to cool for around 10 minutes before serving.
