Peanut Butter Chocolate Chip Baked Oatmeal

Ingredients

  • 2 1/2 cups quick oats
  • 2 large eggs
  • 1 1/2 cup milk
  • 1 cup creamy peanut butter
  • 1/3 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 3/4 cup chocolate chips plus more to top

Instructions

  • Preheat the oven to 350℉. Lightly spray a 9x9 inch baking dish with cooking spray and set aside.
  • In a large bowl, mix together the oats, eggs, milk, peanut butter, sugar, vanilla and baking powder. Fold in the chocolate chips.
  • Pour the mixture into the prepared pan and top with additional chocolate chips.
  • Bake in the preheated oven for 35-40 minutes. Allow to cool for around 10 minutes before serving.
