
Picture this: I get off work at 6PM. I’m pretty hungry, so I pick up some ingredients at the grocery store to make a nice, healthy dinner. I head home, but when I get to the door, I notice that it’s open (I guess that would be hard to miss.) There is this awful smell coming from my house. I walk in and head to the kitchen. The floor is soaked with water, and my sister is beside her boyfriend, crying hysterically. And the whole half of the kitchen where the oven is located is completely black.

The kitchen almost burned down that day, but thank God my sister was okay. She handled it herself, and I was very proud of her. I, on the other hand,would probably have frozen in place, waved my arms in the air and stared like those people in the Sims (ah yes, my favorite computer game as a child)

So needless to say, I couldn’t make dinner. No worries though, I didn’t feel too hungry after that scare. Usually when I need to calm myself down, I bake something. My go-to stress bake food are these Pumpkin Chocolate Chip Muffins.
Well, that turned out to be a slight problem now that the oven was completely melted. Instead, I made these cute Oat and Peanut Butter Energy Balls. Three ingredients, no bake, so easy! Then I went to McDonalds. The ultimate comfort food. So much for the healthy dinner I had planned…


Oat and Peanut Butter Energy Balls
Ingredients
- 1/3 cup creamy peanut butter
- 1/3 cup maple syrup
- 1 cup rolled oats
Instructions
- In a medium bowl, mix together the peanut butter, maple syrup and oats until fully combined.
- Form into small balls, and store in an airtight container in the refrigerator. Or place the balls on a plate, and place in the freezer. Freeze for around 2 hours. Place balls in freezer bag.



Sometimes McDonalds is just right. But what a awful situation! Thank goodness everyone is OK. Great thinking with the oat & peanut butter energy balls!

Holy smokes! No pun intended. I am sorry about the kitchen almost burning down incident… I know exactly how that is, how that smells, and how scary it is. I left a chicken cooking on the stovetop and fell asleep until I woke up choking and gasping for air. I burnt the chicken and melted the pan. These energy balls are the perfect, simple pick me ups!
Oh my goodness! I'm happy to hear your sister is OK. I can't imagine what I would have done in those circumstances. Probably the same as you running around looking like a windmill. How ironic that you ended up at McDonald's after planning a nice healthy meal.
I so could use some of these energy balls. I think I'd eat a whole batch in the morning since I dislike coffee and refuse energy drinks. I love oats and peanut butter so will have to try some of these ASAP.
