The last few days leading up to Halloween and I am going to make them COUNT!

It seems like I have made an oatmeal for every occasion, but this is my first Halloween oatmeal! 

But this Halloween Blended Baked Oats barely even tastes like oatmeal. Blending it up and baking it makes it taste like a cake. And I am here for it!

What you need to make Halloween Blended Baked Oats

Not much at all! All you need is:

  • oats
  • baking powder
  • chia seeds
  • banana
  • milk
  • strawberry preserves
  • candy eyeballs

Tips and Tricks

Make it vegan: I use whatever milk I have on hand, but one of the ways that I love to make these oats is with oat milk. I find that the paring oatmeal with oat milk gives it a rich, comforting flavour. Bonus: you just made this recipe vegan! But you can switch it to any dairy free milk you prefer.

Different fillings: Don't have strawberry preserves on hand? While I think it looks spooky because it looks like blood, but any type will do. I have made it with apricot preserves the other day and it kind of looked like puss was coming out of the eyeballs. Definitely another spooky option.

Halloween Blended Baked Oats

Ingredients

  • ½ cup old-fashioned oats
  • 1 teaspoon baking powder
  • 2 teaspoon chia seeds
  • ½ medium banana
  • ½ cup milk
  • 2 tablespoon strawberry preserves
  • candy eyeballs

Instructions

  • Preheat the oven to 400°F.
  • In a small blender, add the oats, baking powder, chia seeds, banana and milk. Pulse until smooth.
  • Pour most of the batter into a ramekin, reserving around 2-3 tablespoon of batter. Scoop the strawberry preserves into the centre of the ramekin, then top with the reserved batter. Sprinkle with candy eyeballs.
  • Bake in the preheated oven for 20 minutes.
