Okay, I must admit something: I don't know the first thing about St Patrick's Day. I know that it involves all things green..but other than that.. nothing much.

Also, I have pinched many a time on the day of. I don't know what's up with that.

But give me any excuse to make food? I am SO in.
 
I remember when I was taking first year French back in university: the day after St Patrick's day, I was the only person who showed up!! Maybe if my fellow classmates have sipped on this drink in the morning, they would have felt better.
 
I was really sceptical before I had my first green smoothie... I mean.. they are green. Not the most appetizing color. But TRUST ME! Coming from someone who does't really consume vegetables all too often (I am trying to change, I promise!) this is an awesome way to sneak some in without even noticing. And you can't even taste the spinach!
 
So whether it's on St Patrick's Day or the morning after, I do hope you try this smoothie. And happy St Patrick's Day.... whatever it is.

Ingredients

  • 1 cup baby spinach
  • cup milk of choice
  • cup frozen peaches
  • cup frozen mangoes
  • cup frozen strawberries
  • 1 medium banana, cut into coins and frozen

Instructions

  • Combine all the ingredients in a blender until smooth.

  2. Cathleen, it has only been recently that I started adding greens to smoothies. You're right, it's not too noticeable. Anytime I can get more veggies into my kids, I'm on it. Have a super St. Patrick's Day!
