Halloween is one of my favourite times of the year.

If you haven't noticed already, I have a huge sweet tooth. I don't go a day without eating chocolate. So a day that you have free reign to eat all the chocolate and candies you want, without anyone judging you? That sounds like my kind of day!

Another thing I love is sharing my baking with my students. Which is kind of hard for me in this peanut free school when my favourite combo is peanut butter and chocolate. But this challenge has been a fun exploration of different flavour combinations and late night Google searches.

Like is Nutella peanut free? I am still a little unclear on that one...

I actually made these Frankenstein Rice Krispie Squares a while ago, but I have been just so busy that I had no time to post it (life of a teacher). So finally, on a Friday where all I want to do is sleep after an exhaustively busy week,I am posting this recipe so that I can have at least one Halloween recipe this year.

And in true teacher fashion, this Frankenstein Rice Krispie Squares recipe can be made in under 15 minutes, so I don't feel like I am wasting too much time on baking. I can get to my stacks of marking and report card writing.

This is school approved and so fun to make. I think I am going to be buying more candy eyeballs this weekend!

Frankenstein Rice Krispies Squares

Ingredients

  • ¼ cup salted butter
  • 4 cups mini marshmallows
  • green food dye
  • 5 cups rice krispies cereal
  • 1 cup chocolate chips
  • candy eyes

Instructions

  • Lightly butter a 9×13 inch baking pan. Set aside.
  • In a large saucepan, melt the butter on medium heat. Add in the marshmallows, and mix until melted. Mix in enough green food colouring until you reach your desired colour.
  • Remove from heat, and quickly mix in the rice krispies cereal.
  • Pour the mixture into the prepared baking pan, and press down evenly. Allow to cool, then cut into squares
  • Place the chocolate chips in a small bowl. Heat in 30 second intervals in the microwave, mixing after each 30 seconds until the chocolate is completely melted.
  • Dip each of the rice Krispie squares into the melted chocolate.
