You know, I should really just name everything I make now easy. I should have an easy category as my go-to “I’m going to make these because I only have 5 minutes to spare and I want to make something good” pile. Although it feels as though I would be going there a lot regardless: lots of time or no.
To celebrate almost being done with this term (and to drown my sorrows/fears regarding some midterm exams I may have done very awful on. No matter the amount of studying I put in, I dread them like the plague) I have made a cake. What king of cake?
The best kind.
Simple. Easy. You will probably have all these ingredients. Why go out to Dairy Queen for an ice cream cake when you can make one in the comfort of your own home?
It is a win win win situation.
Win.
What you’ll need:
-24 chocolate sandwich cookies (I used Fudgee-O cookies)
-1/4 cup butter, melted
-6 cups vanilla ice cream, softened
+peanut butter M&M’s
Directions:
1. Break the cookies into smaller pieces and place in a blender or food processor. Pulse until you have fine crumbs.
2. Mix the cookie crumbs and the melted butter in a small bowl until fully combined. Press the mixture on the bottom of a pie or tart pan.
3. Pack the vanilla ice cream in the pan. Decorate with the peanut butter M&M’s and place in the freezer to harden.

I cannot even remember how many exams I had in my entire school/university life. I never, ever got used to them, I always had the same anxiety. This dessert would definitey make me forget all these things! Delicious!
