When I was a kid, I was extremely fascinated by dinosaurs. I would read all about them, go to Science World to learn about them and talk to everyone who would listen (maybe even people who didn’t listen) about them.
So when I heard that scientists have found ample evidence to prove modern birds are descendants of dinosaurs, I was pretty excited. It was as though I was sort of living with dinosaurs. And chickens? Eating dinosaurs. Take that Jurassic Park: I am getting you dinosaurs back for eating some of my kind.
To see how close chickens and dinosaurs are, a new found hero of mine named Jack Horner is planning on creating a dinosaur by reverse-evolving a chicken. Think about that next time you bite into a piece of chicken.
What you’ll need:
-2 large boneless chicken breasts
–2 eggs
-3/4 cup crushed crackers
-1/2 teaspoon chipotle powder
-dash of ground pepper
-dash of spicy sea salt
-1/4 cup butter, cubed
Directions:
1. Preheat the oven to 375˚F
2. In a medium bowl, whisk the eggs. On a large plate, combine the crushed crackers, chipotle, pepper and salt.
3. Dip each chicken breast in the whisked eggs, then coat in the cracker mixture. Place on a glass baking dish. Add the cubed butter around the chicken.
4. Bake for around 35 minutes
Looks so good! I love the idea of coating chicken with crackers!
Had no idea that birds came from dinosaurs … very interesting 🙂
Now whenever I eat chicken I will think of dinosaurs… thanks 😉 Looks good!
Maybe you should call this "Cracker Crumb Dinosaur" 😉
crunchy chicken .. who can say NO to that 🙂
I've never tried this for coating chicken before, but it looks really good!
