Okay, so I know that the majority of you are thinking about your turkey and sweet potato casserole for Thanksgiving.

But me? I am going straight for my Cast Iron Spicy Perogy Pizza recipe. It's no contest for me, this pizza would win over turkey any day.

Although, this is coming from a turkey hater, so if you love turkey have at it.

And have mine too.

What you need to make Cast Iron Spicy Perogy Pizza

  • active dry yeast
  • brown sugar
  • all-purpose flour
  • spices (salt, pepper, chili powder, onion powder, garlic powder)
  • salted butter
  • potatoes
  • mozzarella cheese
  • sour cream
  • bacon
  • green onions

So Cast Iron Spicy Perogy Pizza it is for me!

Ever since I tried the perogy pizza from Boston Pizza, I knew that I needed to try to recreate it at home.

So I took the base cast iron skillet pizza that I have been using on my Bacon Pizza and my Jalapeno Popper Pizza and made my favourite pizza yet.

I honestly don't think I want another pizza recipe after this.

Not only is this perogy pizza easy to make, this recipe can be adapted in so many ways.

Vegetarian? Omit the bacon.

Like it spicy? Crank up the spice by adding more chilli powder or red chilli flakes.

Want an extra oomph? Top it with sour cream: my ultimate favourite way of eating this pizza.

And if you really need to, you can add your turkey leftovers on top. Gotta use them up somehow.

Ingredients

Pizza Crust

  • 2 ¼ teaspoon active dry yeast
  • ½ teaspoon brown sugar
  • 1 ¼ cup warm water (110˚F/45˚C)
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • ¼ cup salted butter, softened
  • 2 cups all-purpose flour

Pizza Toppings

  • 2 cups water
  • 4 medium potatoes, peeled and sliced thin
  • ½ teaspoon chili powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon ground pepper
  • 1 ½ cups mozzarella cheese
  • 6 tablespoon sour cream, divided
  • 5 slices bacon cooked crisp, drained and crumbled
  • 2 medium green onions, chopped

Instructions

  • Sprinkle the yeast and brown sugar over warm water in the bowl of a stand mixer fitted with a dough hook. Let stand 5 to 10 minutes until the yeast softens and begins to form a creamy foam.
  • Turn mixer to the lowest setting and slowly add 2 cups flour ½ cup at a time. Add salt, onion powder and ¼ cup butter. Integrate the remaining 2 cups flour and knead until dough is smooth and elastic, around 5 to 7 minutes.
  • Coat a large bowl with 1 tablespoon of olive oil. Shape the dough into a ball and place in the bowl, turning to coat all sides with oil. Cover the bowl with a towel and let rise in a warm area until dough has doubled in size, around 45 minutes. Punch down dough and allow to rest for 20 minutes.
  • Pour the water into a large saucepan. Add the potatoes, chilli powder, garlic powder, onion powder, salt and pepper. Cover, and cook until the potatoes are soft. Remove the lid and cook until the water has evaporated.
  • Preheat the oven to 400°F. Grease a 12 inch cast iron skillet, and press half of the pizza dough into the skillet. Save the rest in the fridge for some other time.
  • Spread 3 tablespoon sour cream on top. Layer with the boiled potato, remaining sour cream, cheeses and bacon.
  • Bake in the preheated oven for 35 minutes, or until the crust is golden brown.

Notes

  1. Serve with an extra dollop of sour cream in the centre.
  2. Can omit the bacon for a vegetarian version.

  1. This is by far the best cast iron pizza dough recipe ever. I have saved this in my favourites and probably made this about 3-4 times now! I use this dough recipe and switch up my toppings, it’s so delicious. I cook mine for a bit longer the amount of time posted here, because I like a crispier crust! Thanks for much for sharing!!
