It is almost Easter! Which means that I will be making anything and everything carrot cake themed. That is because carrot cake is one of my husband's favourite things that I make.

But since I was craving cookies last night, I started this week of carrot cake recipes by making these Carrot Cake Cookie Sandwiches.

What you need to make Carrot Cake Cookie Sandwiches

Basically just pantry essentials. All you need is:

  • butter
  • brown sugar
  • egg
  • flour
  • cinnamon
  • baking powder
  • baking soda
  • carrots
  • oats
  • powdered sugar
  • cream cheese

That's it!

Tips on making these cookies

First, make sure you do not microwave the butter or the cream cheese to soften it! That will make your cookies flat, and your frosting runny. Just take them out of the fridge a couple of hours before you are planning on making these cookies.

Another tip is to use fresh grated carrots! I have tried making this recipe with pre-grated carrots and while it made the process a lot easier, it dried out the cookies a lot more.

I wanted to be able to bring some of these cookies to school, so I didn't add any nuts to these. But if you wanted to add an additional crunch, I would suggest adding a ½ cup of chopped walnuts to the batter.

Ingredients

  • ½ cup salted butter, softened
  • 1 cup brown sugar
  • 1 large egg
  • 1 cup flour
  • ½ teaspoon ground cinnamon
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 cup carrots, grated
  • 1 cup rolled oats

Filling

  • 4 oz cream cheese, softened
  • 2 tablespoon salted butter
  • 1 cup powdered sugar

Instructions

  • Preheat the oven to 350°F. Line a baking sheet with parchment paper and set aside.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Mix in the egg and vanilla until combined.
  • In a separate bowl, mix together the flour, cinnamon, baking powder and baking soda.
  • Slowly mix the dry ingredients into the wet ingredients until fully incorporated. Fold in the carrots and oats.
  • Using a medium cookie scoop, scoop the dough onto the prepared baking sheet and bake in the preheated oven for 15 minutes. Allow to cool completely on the baking sheet.
  • Once the cookies are cooled, cream together the "filling" ingredients until smooth and creamy.
  • Make a sandwich by adding the filling to the center of a cookie and topping it with another cookie.

    I had such high hopes for these cookies but they spread absolutely flat and were inedible. I'm so sad because they tasted fine but obviously didn't come out the way they should. Any pointers to what I did wrong?

    1. Oh no! I am so sorry to hear this!
      It could be that your butter was too soft. It should be room temperature, and not melted. Or perhaps the baking powder/baking soda was a little old? It could be a number of reasons, but I will try making this recipe again and see if I can troubleshoot it for you!

  2. I made these today. Followed the recipe and instructions but turned out thin, not fluffy like the picture. I used room temp butter and room temp egg. I slowly mixed the dry and wet ingredients. Folded in the shredded carrots and oats. Help. What do you think I did wrong?

    1. Hello!! I use a medium cookie scoop and do not pat them down. Bake them when they are in a round ball.
      How did they look going into the oven?

      Mine also went flat while baking. I would suggest chilling the dough before baking. My assumption is that the butter is causing it to spread.
