Easy Black Bean Quinoa Tacos recipe. This vegetarian dinner idea makes a great weeknight meal that’s vegan and gluten free.

I never used to, but ever since the beginning of the pandemic when meat was really hard to find, I quite liked having a break from cooking meat. Even if it’s just once a week. Meatless Monday is my time to experiment with vegetarian cooking, and I have got to say that I love it.
I made a big batch of these Black Bean Quinoa Tacos for both today and tomorrow for Taco Tuesday. They are that good!
But then again, we don’t have to wait for these days to have a taco night. These vegetarian tacos are going to go on my regular rotation for sure. In fact, they are actually vegan tacos, so I can make them with my vegan friends too!
What you need to make Black Bean Quinoa Tacos
Though the list seems long, you just need staple pantry ingredients to make these black bean tacos. All you need is:
- olive oil (or vegetable oil)
- yellow or red onion
- salt
- garlic
- chili powder
- cumin
- cayenne pepper
- tomato paste
- uncooked quinoa
- vegetable broth
- a can of black beans
- corn tortillas
- toppings (lettuce, avocado, homemade salsa, fresh cilantro… etc)
Tips
Storage: Store any leftover black bean taco filling in an airtight container in the fridge for up to 4-5 days.
Make these with meat. Any meat eaters in your house? Swapping the quinoa taco meat for real meat such as ground turkey or ground beef work well here.
Add a little more heat. Sprinkle your tacos with hot sauce or red pepper flakes to add a kick of spiciness. I also love adding some chopped green chiles into the black bean mixture.
What tortillas to use? As long as you are using warm tortillas, any kind of tortilla will work. Instead of corn tortillas, you could always try some flour tortillas from the grocery store. Heck, you could even just get some tortilla chips and scoop the quinoa mixture like a dip.
Topping ideas: I think it is all about the toppings! Apart from the obvious toppings, some lime juice, sour cream, bell peppers, green onion and pickled onions are always a good idea.

Black Bean Quinoa Tacos
Ingredients
- 1 Tbsp oil
- 1 small onion, diced
- 1 tsp salt
- 2 cloves garlic
- 1 1/2 tsp chili powder
- 1 1/2 tsp cumin
- 1 1/2 tsp cayenne pepper
- 2 Tbsp tomato paste
- 1 cup dry quinoa
- 2 cups vegetable broth
- 1 1/2 cups cooked black beans (or one 14 oz can, drained and rinsed)
- 8 (6 inch) corn tortillas
Toppings
- shredded lettuce
- avocado, chopped
- cilantro
- salsa
- shredded cheese
Instructions
- In a large skillet, heat the oil over medium heat. Once the oil is hot, cook the onion for around 2-3 minutes or until fragrant. Mix in the garlic and cook for around 1 minute.
- Add in the chili powder, cumin, cayenne pepper and tomato paste. Mix until the onion mixture is coated. Add in the quinoa and toast for around 1-2 minutes.
- Add in the vegetable broth and bring to a boil. Once boiling, mix in the black beans. Reduce heat to a simmer. Cover and cook for 15 minutes.
- Fry the tortillas on a frying pan lightly coated with oil to warm up. Fill the tortillas with the quinoa mixture and desired toppings.
We are big black bean lovers and these tacos were perfect with the addition of the quinoa delicious and balanced flavors
