It's reading week this week. One week of no school. One week of making promises to myself, all of which I am sure to break. "I will catch up on my school work". "I will start on this project that I've been putting off because this class is ridiculously confusing, and I don't want to give a lecture to the class being totally lost.."

The list of promises goes on. It's worse than New Years I tell you!

But all the while I'm making these promises, I'm thinking about the caesar chicken pizza that I made last week, and cursing myself because I didn't buy any tomato sauce like I promised myself last week to experiment with making another pizza. There we go again, another promise to myself broken.

As I sulk to my refrigerator, just to see if there's anything else I can eat, my eyes are suddenly attracted to an almost empty container of BBQ sauce. PERFECT!!

Now as a warning, when I make pizza, I grate a LOT of cheese. Probably half of it ends up in my mouth because, come on now, is there anything quite as tempting as grated cheese? I didn't think so. Cheese is pretty much the only thing stopping me from being vegan. That and chicken. And beef. Oh, and shrimp. Ouch, I don't know if I can guve up shrimp.

But I digress. If you like chicken, and you like BBQ, then this pizza is definitely for you.

BBQ Chicken Pizza

Easy BBQ Chicken Pizza recipe. Homemade pizza never tasted so good, this dinner idea will be a hit with the whole family!

Ingredients

  • 1 prepared pizza dough (either homemade or storebought)
  • cup BBQ sauce
  • 2 large boneless chicken breasts, cut into cubes
  • 1 small red onion, sliced and separated into rings
  • 2 cups chedder cheese, shredded

Instructions

  • Heat a large skillet over medium-high heat. Fry the chicken for 3-4 minutes on each side, until golden and cooked through. 
  • Preheat the oven to 425˚F. If using an unglazed tile, put it in the oven while preheating.
  • Shape the dough into your desired pizza shape and spread BBQ sauce over it. Sprinkle with 1 cup of the cheese. Place the chicken on top, then sprinkle with the remaining cheese and onions.
  • Place the pizza on the already hot tile and bake for 20 minutes, or until the cheese is melted and the crust is browned.

  1. This is droolworthy, Cathleen. The other day I was thinking to use some sweet and sour chicken leftover to make a pizza. Now I think I want some BBQ chicken.

  3. This pizza looks yummy! What I like about pizzas that you can use whatever you find in the fridge and create something really good 🙂
