I am definitely not! I seriously can't get enough. Mainly because they never take over 10 minutes to make, but you can customise your oatmeal to satisfy whatever craving you may have, be it banana split, strawberries and cream or even turmeric!

And today I was craving some banana coconut mocha oatmeal. So that's what I made.

I am a sucker for a good oatmeal recipe. Especially oatmeal recipes that include chocolate! Any excuse to eat chocolate for breakfast is a huge win for me.

And hey! You are getting your coffee intake and your breakfast all in one convenient bowl. Talk about a recipe that can multitask!

My food cravings always seem to go against the seasons. Why am I craving warm, comforting breakfasts in the middle of summer? And why do I crave pumpkin half a year after pumpkin season?

I am sure there are other wackos like me (much love!) that have cravings that vary by the day. Not even. By the minute. Whenever people tell me that they forget to eat meals, it seems unthinkable to me. I am always craving some type of food, even after I just finished eating.

The great thing about this Banana Coconut Mocha Oatmeal is that if you use vegan chocolate chips (like I do!), you can make this oatmeal vegan, gluten free and dairy free. But it is not taste free, I can tell you that ;).

This oatmeal is also great to customize to your liking. If you don't have a banana on hand, feel free to substitute some honey (I usually do 2 teaspoon honey). If you don't have coconut milk, use milk of your choice. Don't want coffee in there? Omit the coffee and replace it with water or more milk.

There is no end to ways to make this oatmeal! Experiment, and let me know what you think!

Banana Coconut Mocha Oatmeal

Ingredients

  • cup coconut milk
  • cup strong coffee
  • ½ cup rolled oats
  • ½ medium banana, mashed
  • 1 tablespoon unsweetened cocoa powder
  • 2 teaspoon sweetened shredded coconut
  • 1 teaspoon chocolate chips

Instructions

  • Heat the coffee and milk in a small saucepan. Add in the oats. Bring to a boil, and reduce the heat. Add in the mashed banana. Allow to simmer for 4-5 minutes, stirring occasionally. Mix in the cocoa powder.
  • Pour into a bowl and top with shredded coconut and chocolate chips.

    This was like my favorite coffee drink for breakfast! I love the combination of mocha and banana, and it was such a treat to have both in my oatmeal!

    Who said that you can't eat an oatmeal every day. Yes you can... if it is made using this recipe. Fantastic result!
