This is the grown up version of everybody's favourite food.

Or at least my favourite food. Every time it is my turn to make dinner I will be making some type of mac and cheese.

Okay, maybe not everytime. But maybe around 90% of the time. Which is pretty darn often.

Lately I have been all about my super cheesy baked mac and cheese because it is quick and easy to make, and I almost always have all of the ingredients on hand.

But this week, I had some feta cheese that really needed using. Like, I am almost ashamed of how long this feta cheese was in my fridge. Usually I eat it up within a day or two because I LOVE feta cheese so much!

Somehow this cheese got pushed to the back of my fridge, covered up by leftovers and cakes which I grabbed for dinner/snack/breakfast without bothering to uncover one of my favourite cheeses.

So when I finally found my feta cheese that I bought a couple of weeks ago, I immediately googled a feta mac and cheese. Because obviously I'd be making mac and cheese. Is that even a question?

Then I came across Cooking Classy's bacon feta macaroni and cheese, my life changed. For the better, obviously.

Combining one of my favourite cheeses with one of my favourite meat products!! Bacon, aka: the reason I could never be a vegetarian. Don't even tell me there are vegan options, because I can't imagine they can crisp up as nicely as this.

But any vegans out there, I do welcome your suggestions! 😉

I changed this recipe ever so slightly because I didn't have Provolone cheese on hand and I wanted to make this recipe NOW. But check out the original recipe for deets if you are not digging the mozzarella in your mac and cheese. I don't discriminate when it comes to cheese, but I know a lot of people who have a serious aversion to mozzarella in anything other than pizza.

Those weirdos. 🙄

AND this recipe makes TONS of leftovers, especially when you are a two person household. Hello lunch for tomorrow!

Bacon and Feta Mac and Cheese

This Bacon and Feta Mac and Cheese is macaroni and cheese for grown ups. This recipe makes a lot, so you can have leftovers for dinner all week.

Ingredients

  • 3 cups dry elbow macaroni
  • 3 tablespoon salted butter
  • 3 tablespoon all-purpose flour
  • 2 ½ cups milk
  • 1 ⅓ cups Feta cheese, crumbled and divided
  • 1 ½ cups mozzarella cheese, shredded
  • salt and pepper to taste
  • 10 slices bacon, fried until crispy and crumbled

Instructions

  • Cook the macaroni according to package directions. Drain and set aside.
  • Meanwhile, in a medium saucepan, melt the butter. Whisk in the flour for around one minute. Add in the milk, and whisk until fully combined. Bring the mixture to a boil, then reduce heat to a simmer, stirring frequently until thickened.
  • Add ⅔ cups of feta and the mozzarella cheese to the milk mixture, and cook over low heat until the mozzarella has melted. Season with the salt and pepper.
  • Pour the macaroni into the cheese sauce, and toss to coat. Mix in around ¾ of the crumbled bacon.
  • Pour the mixture into a lightly greased casserole dish, then sprinkle the top with the remaining Feta cheese and bacon.
  • Set the oven to broil on high, and cook the macaroni for around 2-3 minutes.

    So delicious! The feta and bacon are great together. Never would have thought to use feta in a mac and cheese but it was so salty and delicious!

    Wow I just love the flavor combination in this delicious casserole bacon really makes a huge difference we loved it!

  5. I have to admit vegetarian bacon is pretty lame, but I do love the idea of using feta in mac & cheese and I love mozzarella in everything. Seriously who wouldn't? You're right, weirdos 😂😂😂
