I love muffin pans. They can do anything. They are the swiss army knife of the kitchen. I have made mini lasagna in them, and many, many muffins. I was going to make one of the many muffin pan ideas I have seen on Pinterest, but I went with what I know best.
Making muffins. You see, when I buy apples, I don’t just buy one or two. I buy the whole orchard. So when the apples inevitably get soft and bruised, I need to do something with them. And what better better to make then muffins?(Although I could have made some apple coffee cake, apple pie cookies, or apple-pumpkin muffin pancakes. I have lots of options)
The thing about these muffins is when I made them, I thought I added way too many apples, even though I only added one! It just looks like so much in my batter. But when they came out of the oven, you could barely tell that it had apple in it at all! Maybe because I shredded the apple. A sneaky way of adding a healthy ingredient for picky eaters 😉
I also experimented: Used paper liners for some, and sprayed the muffin pan with cooking spray for the others. The ones without the paper liners were bigger, which is always a plus, but they were equally delicious.
Apple Streusel Muffins
Ingredients
Muffins
- 2 cups all purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 1/2 tsp vanilla extract
- 1 large apple, peeled and cored, 3/4 shredded, 1/4 cut into cubes
Streusel topping
- 1/3 cup brown sugar
- 1 Tbsp all purpose flour
- 1/4 tsp ground cinnamon
- 1 Tbsp salted butter, melted
Instructions
- Preheat oven to 375˚F. Line muffin pan with paper liners, or lightly spray a muffin pan.
- In a medium bowl, combine the 2 cups flour, baking powder, baking soda, salt, 1 teaspoon cinnamon and nutmeg.
- In a large bowl, cream together the 1/2 cup butter, 1/2 cup brown and white sugar until light and fluffy. Add the eggs and vanilla and beat well. Slowly add the flour mixture, mixing until fully incorporated. Fold in the apples.
- Spoon the batter into the prepared muffin pans.
- In a small bowl, combine the streusel topping ingredients together. Sprinkle over the muffins.
- Bake for around 15 minutes, or until a toothpick inserted comes out clean. Place on wire racks to cool completely.
