Is it too early to post another oatmeal recipe?

I am seriously obsessed! And around half a year too late to be obsessed with oatmeal. Why was I not craving comforting bowls of deliciousness in the cold of winter?

I think because in the winter, I still thought oatmeal was boring. But now that my eyes have been opened to the different ways to make oatmeal, I don't want anything else for breakfast.

This banana split oatmeal is like a dessert that you can have for breakfast. This is the perfect treat to begin your morning.

So to make this recipe more summer appropriate, I am putting in some summer berries. Specifically, strawberries. Topped it with some vanilla Greek yogurt. And calling it a banana split. Because my favourite breakfasts are "healthy" desserts. This is healthy, right? No ice cream = health food.

Don't worry. My math is correct. I am a math teacher.

In the past week, I made this banana split oatmeal recipe 5 times. 5 times! And not all of them were for breakfast either. I don't oppose to eating oatmeal for dessert. Who's with me?

Yeah, I don't think many of you are with me. And I wouldn't be on board either if you asked me a couple of months ago. Back then, I was an oatmeal hater. Hated the taste, hated the texture... I mean, why would you want oatmeal for breakfast when you can have some sugary cereal, or yogurt topped with granola?

So I would pass right oats when I was searching for breakfasts in the morning. Unless I was making granola of course.

But with the rise of crazy beautiful oatmeal on Instagram,  I decided to give it one more try.

And all you oatmeal haters out there, you really should too. If you top it with enough goodies, you will crave them daily. From one oatmeal hater to another. That's a promise.

Banana Split Oatmeal Recipe

Banana Split Oatmeal

Place the Nutella in a microwavable safe cup, and heat in the microwave for 30 seconds. Drizzle the melted Nutella over the oatmeal. Top with peanuts and cacao nibs.

Ingredients

  • 1 cup milk of choice
  • ½ cup old fashioned oats
  • ½ medium banana, sliced
  • cup strawberries, diced
  • ½ cup vanilla Greek yogurt
  • 1 teaspoon Nutella
  • 1 teaspoon peanuts, unsalted
  • ½ teaspoon cacao nibs

Instructions

  • Heat the milk in a small saucepan on medium heat. Stir in the oats, and bring to a boil. Reduce heat, and allow to simmer until thickened.
  • Pour the oatmeal into a bowl. Top with bananas and strawberries. Dollop the Greek yogurt on top.
  • Place the Nutella in a microwavable safe cup, and heat in the microwave for 30 seconds. Drizzle the melted Nutella over the oatmeal. Top with peanuts and cacao nibs.

Notes

You can add more or less of the toppings, to your liking.
