The weather is beginning to cool down a little. Which to me indicates that I can begin making some comfort food again.

Not that I really need an excuse. Because this Bacon Gnocchi is good enough to make at any time of the year, regardless of the weather.

What you need to make Bacon Gnocchi

This is one of my go-to weeknight dinner ideas because it's so easy to make, and I usually have all of the ingredients too! All you need is:

  • store bought gnocchi
  • bacon
  • garlic
  • cayenne pepper
  • diced tomatoes
  • tomato paste
  • heavy cream
  • mozzarella cheese

That's it!

Variations

I have made this recipe both with and without bacon. If you don't have bacon on hand, you can always sub in chicken, ground beef... really whatever leftovers you have in the kitchen. 

I also love making vegetarian versions of this gnocchi. Omitting the bacon and adding broccoli or beans is a great way to switch it up. To be honest, this recipe is so versatile that just about anything would taste great in it!

Bacon Gnocchi

Ingredients

  • 500 g store bought gnocchi
  • 12 oz bacon, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cayenne pepper
  • 1 (400g) can diced tomatoes
  • 1 tablespoon tomato paste
  • 3 tablespoon heavy cream
  • ½ cup mozzarella cheese, shredded

Instructions

  • Preheat the oven to 400°F.
  • Bring a medium saucepan of salted water to a boil. Cook the gnocchi in the boiling water until the gnocchi rises to the surface. Drain and set aside.
  • Meanwhile, cook the bacon until it starts to crisp. Discard most of the fat, then add in the garlic and cook for around 1 minute.
  • Add in the cayenne pepper, diced tomatoes and tomato paste. Cook for around 5 minutes. Mix in the heavy cream.
  • Remove from heat and mix in the gnocchi. Pour the mixture into a 9 inch square baking pan and top with the mozzarella.
  • Bake in the preheated oven for 10 minutes, or until the mozzarella is melted.

    Very tasty! I made a couple of minor mods to the core recipe: I sauteed a diced onion in the bacon grease before adding the garlic, and I didn’t have any heavy cream so I used about the same amount of cream cheese instead. The teaspoon of cayenne is probably a bit too much for the kids, but for my wife and I it was just the right level of heat. Will definitely be making this again!

    I love that you can swap out almost any kind of meat for this gnocchi recipe, but if I'm being honest, bacon wins every time! haha!
