Meat, beans….CHILI! That is what fathers are made of.
So this Father’s Day, regardless of the weather, I will be making chili. And lots of it.
Thinking back to all of the time in the kitchen with my father, I remember him giving me some very good lessons in food. Here are some words of wisdom from my dad:
- Always add a lot of onions when cooking with meat. The onions will bring out the meat flavor, and that way you can add less meat, making your dish less expensive.
- Cut the potato skins away from you. That way you won’t get cut as often. (he needed to repeat that one a couple of times)
- EVERYTHING is better with butter.
And while I have used none of his words of wisdom on this dish, they have definitely come in handy in my day to day cooking experience.
The last one especially. Have you ever cooked mushrooms in butter and garlic? Pure HEAVEN right there. On Saturday mornings if we wanted a treat, my dad would cook some of that up and we would head to the store for some fresh baked focaccia bread. Then we would make some hash browns and maybe some bacon. It was the breakfast for champions.
But one of my favorite meals that he made was his chili. I would request it constantly.
My parents each had their specialty. My mom’s was her lasagna. Side note: to this day, I have not made lasagna. What is up with that?? My aunt’s was her spaghetti. It had 3 different types of ketchup and loaded with cut up sausages. Yum, right? And my dad’s was chili. You can tell that we were not vegetarian in our family.
And while this is nowhere near as good as my dad’s chili (which I will force out of him one day), it will have to do until I go back to Vancouver in a month and request it. Every. Night.

5 Ingredient Corn and Black Bean Chili
Ingredients
- 1 lb ground beef
- 1 (28 oz) can diced tomatoes with herbs and spices
- 1 cup frozen corn
- 1 1/2 cups cooked black beans
- 2 cups tomato sauce
- 1 Tbsp Tabasco sauce (optional)
Instructions
- In a large saucepan, cook the ground beef until it is no longer pink. Drain.
- Add the remaining ingredients, and simmer on low for 1 to 1.5 hours.
Wait…Dads are made of meat, beans and chili? Awesome! Haha! I'm totally digging this chili here…the black beans and corn take it to a whole new level. Also, your Dad had some solid kitchen advice (especially the part about the butter…haha!).
