And I couldn't be happier. I'm buying out their stock of peppermint flavoured items, and getting two cartons of eggnog every time I am at the grocery store. One to drink, and one to put in recipes.

So to kick off the holiday season, I'm making these Chewy Peppermint Chunk Cookies.

I'm sorry Thanksgiving. I may be forgetting all about you. But moving to the US from Canada, I am not used to having Thanksgiving after Halloween. Over there, we are done with Thanksgiving at the beginning of October. That way, we are completely focused on Christmas as soon as Halloween ends. And I love it.

What do you need to make these Chewy Peppermint Chunk Cookies?

Apart from the peppermint chunks, just your pantry essentials. All you need is:

  • butter
  • brown sugar
  • corn syrup
  • egg
  • vanilla extract 
  • flour
  • salt
  • baking powder
  • peppermint chunks

That's it!

I have used these peppermint chunks in my Peppermint Chunk Brownie Cookies and my Peppermint Chunk Brownie Oatmeal. So just in case you are buying these chunks specifically to make these cookies, you have options of other recipes to make with them after these cookies are gone.

And trust me. They don't last long. At least, not in my house.

Chewy Peppermint Chunk Cookies

Ingredients

  • ½ cup unsalted butter
  • ½ cup brown sugar
  • ¼ cup corn syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ¾ cup all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 1 ½ cups peppermint chunks

Instructions

  • In a large bowl, cream together the butter, sugar and corn syrup. Add in the egg and vanilla and mix until fully combined.
  • In a separate bowl, mix together the flour, salt, and baking soda. Slowly mix the dry ingredients into the wet ingredients until fully incorporated. Fold in the peppermint chunks.
  • Place the cookie dough in the fridge for at least 6 hours.
  • Preheat the oven to 350˚F. Line 2 baking sheets with parchment paper.
  • Using a cookie scoop, scoop the batter onto the prepared baking sheets. Bake in the preheated oven for 10-15 minutes,or until the edges are lightly brown. Allow the cookies to cool completely on the baking sheet.
