On days like today, all I want to do is curl up in bed and have banana pancakes served to me with a side of coffee. And maybe a fruit bowl, because I'm feeling fancy. Mondays, am I right?

What do you think of when you think of Banana Pancakes? All I can think of right now is the song by Jack Johnson. But maybe I need to make these pancakes again so that these big, fluffy pancakes will be the first thing on my mind.

This is the problem with making all of these recipes a couple of weeks before you write up the posts. You will be wishing that you could eat them all over again.

These pancakes are some of the easiest pancakes you can make. And it is a great way to use up 2 ripe bananas. In this heat we have been having lately, I'm sure it is quite easy to get your bananas nice and brown for this recipe.

I have a couple of go-to tricks when making pancakes. The first is to "sour" the milk. That is basically adding vinegar to milk and letting it sit. It is a great substitute for buttermilk, which I never have in the house. And I know that a lot of you don't usually have buttermilk in your house either, so I am adding the quick and dirty substitution. This step makes the pancakes extra fluffy!

Another trick that I use when making pancakes is letting the batter sit for a good 15-20 minutes. I find that the longer you let the pancake batter sit, the less chewy the pancakes become.

A lot of the times I won't do that step, just because I am in a hurry and I want to eat RIGHT NOW!! But if you want to treat yourself to fluffy, non-lumpy pancakes, allowing the batter to rest is a good way to go.

What you need to make Banana Pancakes

Just pantry essentials and bananas. All you need is:

  • milk
  • white vinegar
  • flour
  • sugar
  • baking powder
  • salt
  • oil
  • eggs
  • vanilla extract
  • bananas

Ingredients

  • 1 cup milk
  • 1 tablespoon white vinegar
  • 1 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 2 teaspoon baking powder
  • ½ teaspoon salt
  • 1 large egg, beaten
  • 2 tablespoon oil
  • 1 teaspoon vanilla extract
  • 2 medium ripe bananas, mashed

Instructions

  • Combine the milk and vinegar in a small bowl. Set aside for at least 5 minutes to "sour".
  • Meanwhile, mix together the flour, sugar, baking powder and salt in a medium bowl. Set aside.
  • Once the milk has "soured", mix in the egg, oil and vanilla.
  • Mix the wet ingredients into the dry ingredients until fully incorporated. Add in the banana and mix well.
  • Heat a large skillet over medium heat and spray with cooking spray. Scoop ¼ cup of batter for each pancake, and flip when bubbles are covering the surface of the pancake. Cook the other side until it is golden.

Notes

  1. If you have leftovers, you can freeze them and make toaster pancakes. Allow them to cool completely then transfer to a freezer bag and place in the freezer. When ready to use, toast frozen pancakes in toaster.

    Yum! I'm not sure why I've never thought to make banana pancakes before, but these look delicious! I'm certain my kids would LOVE waking up to a big stack of these tomorrow morning for sure 🙂

    To be honest I also thought of that song when I read the header for this, I mean... It's almost impossible not to right?
    It's funny cause in vegan baking too it's common to add vinegar to plant based milk to "curdle" it! It helps the bakes rise and gives a great flavour 😀
