I love banana bread. Love, love, love. Every time I make banana bread, I think to myself "there is no way I can improve on this. Banana bread is pretty much perfected."

Oh how wrong I was.

I feel like when you add peanut butter cups to anything, it instantly becomes 38 times better. So it's only natural for me to test this theory out in some banana bread.

So the trick to making this bread is when you mix in the peanut butter cups, you add one to the mix, then put one in your mouth. One for the mix, one for you. Lather, rinse, repeat.

If you haven't noticed, I have a slight addiction to sugar. You know... just a little. Barely noticeable.

This Peanut Butter Cup Banana Bread takes traditional banana bread to a whole new level. It is a fairly healthy banana bread as it is not made with butter or sugar. But the addition of Reese's cups makes this an indulgent breakfast or grab and go sweet treat.

Peanut Butter Cup Banana Bread Ingredients

You just need a couple of simple ingredients to make this Reese's Peanut Butter Banana Bread. All you need is:

  • all purpose flour
  • baking soda
  • salt
  • ground cinnamon
  • mashed bananas
  • creamy peanut butter
  • plain yogurt
  • large eggs
  • vegetable oil
  • Reese's peanut butter cups
  • chocolate chips

Tips

Storage: Store this chocolate peanut butter banana bread in an airtight container at room temperature for up to 4 days. For best results, wrap the bread in a paper towel to retain a little bit of its moisture. If you wanted it to last longer, wrap it in plastic wrap and store in the fridge for up to 8 days. The plastic wrap ensures the bread doesn't get exposed to the cold air of the fridge, causing it to dry out.

Freezing: This bread freezes beautifully. You can freeze the whole loaf or individual slices. To freeze the entire loaf, wrap it in plastic wrap then aluminum foil. If you wanted to freeze the individual slices, place the cooled bread in a freezer bag (I like separating the slices with parchment paper so they don't stick together). The bread can be frozen for up to 3 months.

Variations

Switch up the mix-ins: For all the peanut butter lovers out there, I love replacing the chocolate with peanut butter chips to give this sweet bread a more pronounced peanut butter flavor. I also love sprinkling some chopped nuts on top of the banana bread for an extra crunch.

Make it into a vegan banana bread: ​use vegan yogurt, dairy free peanut butter cups and flax eggs. To make a flax egg, just mix in 1 Tablespoon of ground flaxseed to 3 Tablespoons of warm water. Allow to rest for at least 5 minutes.

Ingredients

  • 1 cup all-purpose flour
  • 2 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3 medium ripe bananas, mashed
  • ½ cup creamy peanut butter
  • 1 cup plain yogurt
  • 2 large eggs
  • ¼ cup oil
  • 1 ½ cups peanut butter cups, chopped
  • ½ cup chocolate chips

Instructions

  • Preheat the oven to 350˚F. Lightly spray 2 loaf pans.
  • In a medium bowl, mix together the flours, baking soda, salt and cinnamon. Set aside.
  • In a large bowl, beat together the bananas, peanut butter, yogurt, eggs, oil, brown sugar and vanilla until fully combined. Slowly mix in the flour mixture until fully incorporated.
  • Fold in the chopped peanut butter cups and chocolate chips.
  • Pour the batter into the prepared loaf pans and bake in the preheated loaf pans and bake in the preheated oven for 50-55 minutes, or until a toothpick inserted comes out clean. Let cool in pans for 10 minutes and let cool on wire racks.
