Leaving home at 7AM and returning at 7PM is really not agreeing with my dinner planning right now.
When I finally get home, all I want to do is flop down on my comfiest chair, eat brownies while watching Netflix and immediately fall asleep. Because that's what grown ups do. Which means that my boyfriend is on dinner duty every night.
But even though I get home famished and hangry, I always insist on making dinner at least one day from Monday to Friday. Otherwise I feel like I'm not pulling my weight in our little home.
But since we are both starving by the time I enter the house, I need quick and easy recipes in order to fulfill my promise. And this lemon garlic pasta is a winner. It takes exactly as long as it takes to prepare the spaghetti, which means less than 15 minutes. It is also stupid easy, which makes it almost embarrassing that I'm posting a recipe. But, this week has been so busy that if I don't post this, I've got nothing for you!
But I can't really complain. Two months left of school, then I have an entire summer of bumming around and travelling the world. And don't worry, I will take a LOT of pictures!
Anyways, back to this super easy dinner! I actually made this for the first time a LONG time ago. Back in February. I distinctly remember it because my boyfriend was going to Vancouver for a couple of weeks, and I wanted to make him a nice dinner before he left. This was all in case all he could recount to his family was that I make none of the dinners, and expected to have a nice meal waiting for me when I got home.
And even though all I could come up with was a really quick and easy meal, it quickly became a favorite at my house, and have been making it a couple of times a month ever since. The lemon really shines in this recipe, and let's be real. Have you ever met anyone who would say no to garlicy pasta?
The only suggestion that I would give is not to pick a really strong olive oil. I have a very flavorful olive oil that is great for cooking and salads, but it really overpowers this dish. Using a milder tasting olive oil, or even vegetable oil is what I typically do.
Honestly, the hardest part about this pasta is mincing the garlic. Which is a huge win in my books!
Lemon Garlic Pasta
What you'll need:
- 1 lb uncooked spaghetti
- 4 cloves garlic, minced
- 1/2 cup extra virgin olive oil
- 6 Tablespoons lemon juice
- 1/2 teaspoon ground black pepper
- 1/2 cup grated Parmesan cheese
- Set a large pot of salty water to a boil. Cook the pasta according to package instructions. Drain and set aside.
- In a skillet, cook the gralic in the oil until the garlic is golden and fragrant.
- Remove from heat, and mix in the lemon juice and pepper.
- Toss the lemon mixture with the cooked spaghetti. Add in the Parmesan cheese, and mix in until fully combined. Serve immediately.
