Ah yes. Back from camping. I had an AWESOME time. And an awesome tan to boot.
You know what the best part of camping is? Swimming. A hot day and a cold lake is the best combination. Also hammocks. Oh how I love hammocks. I think I spent half my time just laying in a hammock. I even fell asleep in one. I would gladly trade my current bed for a hammock. It’s like I’m being rocked to sleep.
This much relaxing has brought out my creative side, and I have drawn a cute picture of a Lego couple:
Yeah, I’m not much of an artist, but now..it’s back to reality.
And back to the fridge with this carton of buttermilk staring right back at me. Barely used. You’d think that I would get sick of pancakes while camping. Think again.
(Actually, maybe it’s because I have only had pancakes once while camping..)
I would like to give a warning about this recipe. It makes a LOT. Hope you’re hungry. Or freeze the extras and toast it, which has actually become one of my favorite ways to eat pancakes..
What you’ll need:
-1 1/2 cups all-purpose flour
-1 1/2 cups whole wheat flour
-3 tablespoons white sugar
-3 teaspoons baking powder
-1 1/2 teaspoons baking soda
-1/2 teaspoon salt
-2 cups buttermilk
-1 cup milk
-3 eggs
-1/3 cup butter, melted
Directions:
1. In a large bowl, combine the flours,sugar , baking powder, baking soda and salt.
3. Heat a large skillet over medium heat and spray with cooking
spray. Scoop 1/4 cup of batter for each pancake, and flip when bubbles
are covering the surface of the pancake. Flip and cook the other side
until it is golden.
I have that same Corelle plate! My friend used to have a hammock in his room instead of a bed, I tought it was a great idea 🙂

I was about to ask you how was your camping trip; and since you are back on post, I knew you would have a wonderful time. Buttermilk pancake is really soft; great with honey and mix fresh fruits.
I am dying for a bite of these hot and delicious pancakes my friend, why do you do this to me? 😉

Sounds like you had a great time camping! I really want to go camping with my friends before the summer ends, but we'll see how that goes. And I feel the exact same way about hammocks. A good book, a nice balmy day, and a hammock = paradise.
These buttermilk pancakes look so fluffy and light. I like that you use whole wheat flour to make them a little bit healthier.

I've never toasted pancakes – great idea. Sometimes leftover pancakes are good smeared with jam and then rolled into a wrap shape. Nice, quick snack. Anyway, I'll never turn down a pancake – and these look great! Thanks.
