I survived the first week back at school. But more importantly, I survived the flight from Seattle to Milwaukee with a 13 month old. Flying with a baby is not fun, but I'm so glad we got to visit family.

Now it's time for a reset. Healthy recipes for after the holidays. Starting with this Vegan Instant Pot Lentil Chili.

What you need to make Vegan Instant Pot Lentil Chili

I usually have all of the ingredients on hand at home. All you need is:

  • onion
  • bell pepper
  • diced tomatoes
  • tomato paste
  • kidney beans
  • lentils
  • quinoa
  • chili powder
  • cumin
  • oregano
  • garlic powder
  • vegetable broth

Substitutions and Variations

While this chili is vegan as written, you can add meat if you or someone in your family prefers it that way. Just cook some ground beef or ground turkey on saute in your Instant Pot, then add the remaining ingredients.

If you don't have kidney beans on hand, you can use whatever beans you do have. I have used black beans and a mixture of the beans I had in my fridge before, and it turned out great! This recipe is so versatile, you can switch it up to however you like/whatever you have in your house.

Equipment

Ingredients

  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped
  • 1 (14.5 oz) can diced tomatoes
  • 2 tablespoon tomato paste
  • 1 ½ cups cooked kidney beans (or 1 15 oz can, drained and rinsed)
  • 1 cup dry lentils
  • ¾ cup quinoa
  • 2 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • 4 cups vegetable broth

Instructions

  • Add all of the ingredients to the Instant Pot. Stir well.
  • Cook on high pressure for 7 minutes. Allow it to naturally release for 10 minutes.
  • Stir and serve chili warm.
