If you’ve been following me for a while now, you will know that I am a sugarholic. I can’t get enough. So every year, I make the New Year’s resolution of eating less sugar.
And then 2 weeks later I am back to mug cakes for breakfast and cheesecake for dessert. This year, I am prepared for the resolution with this Sugar Free Pound Cake.
I love a good pound cake. But for some reason, I only have one pound cake recipe on my blog: my Apple Pound Cake. I’m going to have to make a lot more, because that is unacceptable to me.
But this Sugar Free Pound Cake will be made on repeat in the New Year, so maybe these two pound cake recipes are the only ones you need!
What do you need to make this Sugar Free Pound Cake?
Pound cakes are notoriously easy to make, and this one is no exception. All you need is:
- flour
- salt
- baking soda
- butter
- baking stevia
- eggs
- vanilla extract
- sour cream
That’s it!
I love having this Sugar Free Pound Cake with a cup of coffee in the morning or a cup of tea in the evening. It is the perfect, healthier for you treat.

Sugar Free Pound Cake
Ingredients
- 1 1/2 cups all-purpose flour
- 1/4 tsp salt
- 1/4 tsp baking soda
- 3/4 cup unsalted butter
- 1 1/4 cup splenda stevia (or any granulated baking stevia)
- 2 large eggs
- 2 tsp pure vanilla extract
- 1/2 cup sour cream
Instructions
- Preheat the oven to 350˚F. Line a loaf pan with parchment paper and set aside.
- In a medium bowl, mix together the flour, salt, and baking soda and set aside.
- In a separate bowl, cream together the butter and the stevia until fully combined. Add in the eggs one at a time, mixing after each addition. Mix in the vanilla extract and sour cream until fully incorporated.
- Slowly mix in the dry ingredients into the wet ingredients until just combined.
- Pour the batter into the prepared loaf pan and bake in the preheated oven for 60-65 minutes, or until a toothpick inserted comes out clean.
- Remove from the oven and allow to cool in the pan on a wire rack for around 10 minutes. Remove from the pan and allow to cool on the wire rack completely.
