My root beer muffins are finally here!!

After teasing you endlessly on Instagram Stories, I am finally sharing this recipe. That is, after having taste tested it over and over until I got it just right.

Too bad John won't even try it. He is afraid of anything that doesn't sound like your typical baked good you could buy at a coffee shop.

Or maybe it's a good thing that John won't try it. More for me!

A whole fridge worth more for me.

The whole reason I made these muffins so many times is because I want to use up all of the root beer that we have in our pantry at home. And somehow, it is a lot.

To be honest, me and John aren't huge pop drinkers. We may have one if we go out to eat at a restaurant, but that is really on a very rare occasion. Mostly because we are both so cheap when we go out to eat, but also because we just aren't used to drinking it anymore. Oftentimes we find that drinking any type of carbonated beverage to be too fizzy for our liking.

If you see me with a fizzy drink in my hand, you will most likely see me stirring it with my straw to get rid of most of the bubbles.

Does this make me a weirdo?

So when we got sent a huge package of root beer from John's parents as a care package last year, we didn't drink it. Like, at all.

And since I can't stand seeing food go to waste, I made these muffins. Over and over and over again these past few months. Because as they say, when life gives you root beer, make root beer muffins. Or something like that.

What you need to make these Root Beer Muffins

Not much at all! All you need is:

  • butter
  • sugar
  • eggs
  • flour
  • cocoa powder
  • baking soda
  • baking powder
  • salt
  • root beer
  • chocolate chips

I am seriously addicted to these muffins!! Is it bad that I eat them every morning?

Here's what I do for breakfast. I take two of these muffins, slather them in Greek yogurt then top them with coconut chips. It is one of my favourite things to eat in the mornings.

Chocolate and root beer is a morning food, right?

Ingredients

  • ¾ cup salted butter, softened
  • ½ cup granulated sugar
  • 3 large eggs
  • 1 cup all-purpose flour (or ½ cake flour and ½ all purpose for softer cupcakes)
  • ¼ cup cocoa powder
  • 1 ½ teaspoon baking soda
  • 1 ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup root beer
  • ¾ cup chocolate chips

Instructions

  • Preheat the oven to 350˚F. Line 2 muffin pans with 22 paper liners. Set aside.
  • In a medium bowl, cream together the butter and sugar. Add in the eggs one at a time, beating after each addition.
  • In a separate bowl, mix together the flour, cocoa powder, baking soda, baking powder and salt. 
  • Slowly mix in the dry ingredients to the wet ingredients, mixing until just combined. Fold in the root beet and chocolate chips.
  • Scoop the batter into to prepared muffin pans, and bake in the preheated oven for 15-20 minutes, or until a toothpick inserted comes out clean.

Notes

This particular recipe sticks to the paper liners unless the muffins are cold. I usually store them in the fridge before eating.

    My kiddos are root beer fanatics so I made these to celebrate them acing their midterms. Between the four of us, we managed to eat an entire batch in less than a weekend. So, I'd say they were well-received, LOL!
