Okay, so I know that I didn't get very good photos of this Chipotle Salmon, but trust me it is so good.

And this is not like Chipotle as in the fast food chain. I don't know if they sell salmon, and to be honest I think that place is kind of a rip off for what you get (don't come at me!)

This salmon is flavoured with chipotle in adobo sauce. AKA: my favourite secret ingredient right now.

I have put chipotle in some of my favourite recipes on my blog, like my Chipotle Tuna Salad and my Chipotle Popcorn Chicken. But this recipe might be even easier to make than the other two combined.

What you need to make Chipotle Salmon

So few ingredients in this recipe, you really have no excuse not to make it. All you need is:

  • salmon
  • chipotle pepper in adobo sauce
  • garlic
  • lemon juice
  • salt and pepper

That's it!

If you haven't tried buying cans of chipotle before, you are definitely in for a treat. My mom always used to have it in the house when I was a kid, and now I have continued the tradition.

Ingredients

  • 16 oz salmon filets
  • 1 clove garlic, minced
  • 1 chipotle pepper, minced
  • 2 teaspoon adobe sauce (pepper and sauce from can)
  • 1 ½ tablespoon lemon juice
  • ¼ teaspoon salt
  • ¼ teaspoon ground pepper

Instructions

  • Preheat the oven to 400˚F. Line a baking sheet with parchment paper and spray with cooking spray. Place the salmon skin side down on the baking sheet and set aside.
  • In a small bowl, mix together the garlic, chipotle pepper, adobo sauce, lemon juice, salt and pepper.
  • Rub the chipotle mixture on top of the salmon and bake in the preheated oven for 15-17 minutes, or until cooked through and flaky.
