Easy Baked Mongolian Chicken recipe. Perfect weeknight meal, or lunch prep idea. Ready in under 30 minutes, it is healthier than take out!
Confession: tonight I went out for pizza and fries for dinner.
Seriously, my eating habits haven’t changed since I was a teenager.
My work habits may have gotten a little better, but that just gives me an even better excuse to go out for fast food instead of making something at home.
But when I have chicken in the house, you know I will be making something quick and easy with it. Like this new favourite of mine: baked Mongolian chicken.
Honestly, I am kinda regretting my decision to buy pizza instead of making this chicken. It is much healthier than pizza, and it doesn’t take that long to make.
Well, okay. That may not be that true. It does take time to let the chicken sit in the marinade. But maybe if I had the foresight, I would have done it the night before.
Also, I just had a really long day. I got to work at 7 AM and left at 7 PM. Sometimes, a pizza really is necessary.
But, when I come home at a reasonable time and I want a nice healthy dinner idea, this is definitely a recipe that I will turn to more and more.
I found this recipe on the blog Sweet and Savory Meals, a blog where I get daily inspiration on what I should make for dinner on any given night.
I followed this recipe almost to a tee, changing a few things here and there to fit with what we had on hand. But this disappeared way faster than I thought it would.
In fact, I made it only yesterday, leaving two full chicken breasts left so that we could have it for dinner tonight as leftovers. Let’s just say, leaving John alone with food will always result in him eating the said food. Hence the pizza night.
What you need to make Baked Mongolian Chicken
Honestly, the ingredient list isn’t even that long. All you need is:
- chicken breasts
- brown sugar
- soy sauce
- sesame oil
- rice vinegar
- garlic
- fresh ginger
- red pepper flakes
- onion powder
That’s it!
So tomorrow night, I am off to the grocery store for some chicken breasts. Maybe I will double the recipe. This would be an awesome meal prep idea, so that I can have a healthy meal for lunch as well as dinner.
On the topic of meal prep, can anyone tell me some meal prep ideas? I am awful at planning ahead, and any advice or recipes would be warmly welcomed!

Baked Mongolian Chicken
Ingredients
- 4 large chicken breasts
Marinade
- 1/2 cup brown sugar
- 1/2 cup soy sauce
- 1/2 cup water
- 2 Tbsp sesame oil
- 2 Tbsp rice vinegar
- 8 cloves garlic, minced
- 1 Tbsp fresh grated ginger
- 1 tsp red pepper flakes
- 1/2 Tbsp onion powder
Instructions
- In a 7x11 inch baking dish, combine all of the marinade ingredients.
- Place the chicken breasts in the marinade, cover with plastic wrap and refrigerate for at least 1 hour. Make sure you flip the chicken at least once.
- Remove from the fridge 1 hour before cooking to allow the dish to warm up at room temperature.
- Preheat the oven to 425˚F.
- Bake uncovered for 15-18 minutes, or until chicken is cooked through and no longer pink. While cooking, spoon the sauce mixture over the chicken so that it picks up more flavour.
- Once the chicken is cooked, remove from the oven and allow to sit for around 5 minutes before serving.
I love love love this recipie, anything made with sesame oil seems to come our really yummy! This is definately my go-to recipie for chicken, also really yummy in a stir fry, if you have time to chop up all the veggies. I will forever make this for my family.

As much as I love Mongolian Chicken I have never made it at home. We have a great Chinese restaurant that makes the most delicious Mongolian chicken and beef dishes. I may have to try this recipe and forego this week’s order.
I would probably go there for dinner most nights too! But this would be a good option for when you want to stay in!
