If anyone is in the Vancouver area, I would recommend trying to do the Grouse Grind.

This is my third summer doing the Grouse Grind, and I fall in love with it every time. You are basically climbing up a mountain: 2.9 km and 2830 stairs. It is a challenge that just makes my summers complete. This summer, I aim to try it at least two more times.

But when you finally reach the top, you want a good sandwich (or two) to picnic on at the top. And you want this said sandwich to be healthy in some way. I mean, you just hiked up a mountain.

Enter these tuna salad sandwiches.

I have made my fair share of tuna salad: pesto tuna saladapple tuna saladcranberry potato chip tuna salad...but now I want to jump on the avocado bandwagon. I have been eyeing so many avocado recipes from other blogs, and asking myself why mine has barely any on it.

So instead of dumping half a liter of mayonnaise into your tuna salad (what? You don't do this?) we are going to be using mostly avocado instead. And don't worry. This is going to be the beginning of the many more avocado recipes to come.

Ingredients

  • 2 (170g) cans tuna, drained
  • 1 ½ medium avocados, ripe and mashed
  • 1 tablespoon mayonnaise
  • ¼ medium onion, diced
  • salt and pepper to taste

Instructions

  • In a medium bowl, mix together the tuna, avocado, mayonnaise, and onion until fully combined. Add the salt and pepper to your liking and enjoy on bread, crackers, or just by itself.
