It seems like everyone has caught the mango fever.

Everywhere I go, there are mango smoothies, mango yogurt, mango salads, mango salsa... Looks like mango has been shacking up with pretty much everyone.

Not that I'm complaining, of course. I mean, recently I have been making mango smoothiesmango green smoothiescherry mango coffee cakes, and lime chicken and mango wrap to name a few. I have caught the mango fever, and have mixed my famous chipotle egg salad sandwich with that delicious fruit. I mean, I should make the most of having mango around while it's in season, right?

I'm glad I did. This sandwich was everything I could ever want in a sandwich, and more. The smokey flavor or the chipotle powder compliments the sweet taste of mango beautifully, and the bell peppers add a delicious crunch to the mix.

This is the perfect picnic basket recipe, and tastes like summer in a sandwich. Put this egg salad on your favorite bread and you're good to go.

Mango Red Pepper Chipotle Egg Salad

Easy Mango Red Pepper Chipotle Egg Salad recipe is the perfect sweet and salty combo. Perfect for a brownbag lunch for work or school.

Ingredients

  • 8 large eggs
  • ¼ medium onion, cubed
  • 1 medium red pepper, cubed
  • 2 teaspoon chipotle powder
  • ¼ cup mayonnaise
  • 1 large mango, peeled and cubed
  • salt and pepper to taste

Instructions

  • Place the eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat.
  • Let eggs stand in the hot water for around 10 minutes.
  • Remove from hot water and place in a bowl of cold water. Peel the eggs and chop them into cubes.
  • Place the chopped eggs in a medium bowl and stir in the onions, red peppers, chipotle powder, and mayonnaise. Fold in the mangoes.

  3. I grew up without being able to have mango due to my mom's allergies, so now I try to use it as often as I can!

  4. I am right there on the mango bandwagon. I absolutely love it in my smoothies and on yogurt or just fresh. I haven't made many savory things with it but this salad sounds delicious!
