Healthy Mocha Muffins

As a mom of two small children, there is not a day that goes by where I do not need to heat up my coffee at least 3 times. I think cold coffee is just a way of life here, and I should just pretend that I meant to have iced coffee. Every day.

But one of the advantages of this is that I always have leftover coffee in mugs lying around the house. And what better way to use up the coffee than in these Healthy Mocha Muffins.

I am just craving baked goods all the time these days. Nursing my newborn just makes me so hungry, and I need snacks lying around the house at all times. This is such a good muffin to make to satisfy my intense hunger while also being fairly good for you.

Healthy Mocha Muffins Ingredients

These healthy chocolate muffins are made with just 10 wholesome ingredients. All you need is:

  • eggs
  • neutral oil - such as avocado or canola oil
  • plain yogurt - regular or Greek yogurt both work
  • strong brewed coffee
  • vanilla extract
  • all purpose flour - can also use white whole wheat flour
  • unsweetened cocoa powder
  • baking soda
  • salt
  • chocolate chips - or chocolate chunks

Tips

Storage: Store these muffins in an airtight container at room temperature for up to 4 days.

Don't have a leftover cup of coffee? Use either instant coffee or instant espresso powder for a more intense coffee flavor.

Make these muffins vegan. All you need to do is change the yogurt to a plant based one, use dairy free chocolate chips and make some flax eggs. To replace a large egg, just mix 1 Tablespoon ground flax with 2.5 Tablespoons of water (in this recipe, double it since there are 2 large eggs). Allow to sit for 5 minutes, then use in place of the egg.

Use an ice cream scoop to scoop the batter. I always have a hard time dividing the batter into the muffin pan. I like to use this ice cream scoop to perfectly divide the muffin batter into the muffin cups.

Do not use muffin liners. While it usually makes for an easier cleanup, because these are healthier muffins they will stick to your paper liners. So I would suggest lightly spraying your muffin pan with cooking spray.

Ingredients

  • 2 large eggs
  • ¼ cup oil
  • ¼ cup plain yogurt
  • ¾ cup strong brewed coffee
  • 1 teaspoon vanilla extract
  • 1 ¾ cup all purpose flour
  • ¼ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup chocolate chips

Instructions

  • Preheat the oven to 375℉. Lightly spray a muffin pan with cooking spray and set aside.
  • In a large bowl, mix together the eggs, oil, yogurt, coffee and vanilla until fully combined.
  • In a separate bowl, mix together the flour, cocoa powder, baking soda and salt.
  • Slowly mix the dry ingredients into the wet ingredients until just combined. Fold in the chocolate chips.
  • Divide the mixture into the prepared muffin pan and bake in the preheated oven for 15 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow to cool in the pan for around 5 minutes, then transfer to a wire rack to cool completely.
