Is it weird that the only reason I made this recipe is because I wanted John to spend less money on take out food?

We have this local deli by our house where John will buy a Reuben Sandwich almost every time he walks by it. Once I looked up how easy it is to make a Reuben, of course I tried making a homemade version! 

Now that John won't be buying as many Reuben sandwiches, how will we spend all this extra cash? Better quality bread slices? Some good wine?

It's really hard to splurge on anything these days with lockdowns still in effect. But I'm sure we can think of something!

At least I have a good Reuben sandwich recipe to make.

Reuben Sandwich Ingredients

This classic Reuben Sandwich recipe is so easy to make. All you need is:

  • a little butter
  • light or dark rye bread
  • thousand island dressing
  • melty Swiss cheese
  • sliced corned beef
  • tart sauerkraut

That's it!!

Tips

What to serve them with. Serve these sandwiches with potato chips or french fries, dill pickles and cole slaw if you want it to taste like what you would get at your local deli counter.

Use mayonnaise instead of butter. If the hot skillet burns the butter, try spreading a thin layer of mayonnaise on the outside of the bread. The side of each bread slice will become a nice golden brown, some people actually likes it better than cooking with butter.

Make it in a panini press. For a healthier choice, cook sandwiches in a panini press.

Eat it while pregnant! The only thing that I was always craving while pregnant was a good deli meat grilled sandwich. While it isn't great to eat corned beef right out of the fridge, all you need to to to make it safe for pregnancy is to give the corned beef a quick zap in the microwave.

Not a fan of sauerkraut? While I love tangy sauerkraut, it is not everyone's cup of tea. You can replace them with pickle slices and add thicker slices of cheese for almost the same effect.

Ingredients

  • 2 tablespoon salted butter
  • 4 slices rye bread
  • 4 tablespoon thousand island dressing
  • 8 slices swiss cheese
  • 8-10 slices corned beef
  • ½ cup sauerkraut

Instructions

  • Heat a large skillet. Spread ½ tablespoon butter on one side of each slice of bread. Place 2 pieces of bread butter side down on the skillet.
  • Divide the dressing evenly on both pieces of bread. Top each slice of bread with 2 slices of swiss cheese. Add 4-5 slices of corned beef on top of each piece of bread. Divide the sauerkraut evenly between both slices then top with the remaining cheese. Place the last piece of bread butter side out on top.
  • Cover the skillet with a lid and cook for around 2-3 minutes, or until bread is golden. Flip and cook the other side for around 2-3 minutes.
