Cilantro: do you love it or hate it?

Personally, I love it. I will put it in literally anything and think it elevates the dish.

My husband on the other hand.. he's one of those people who thinks cilantro tastes like soap, Honestly, I don't understand how people have such polarizing tastes to cilantro.

But you know what that means, right? More for me!

Lime Cilantro Hummus

This Lime Cilantro Hummus is probably the easiest recipe I make to use up my cilantro. All you need is:

  • chickpeas
  • cilantro
  • lime
  • olive oil
  • garlic
  • cayenne pepper

That's it!

I served this as a snack with some crackers and a vegetable platter the other day, and John didn't even flinch. That self proclaimed cilantro hater devoured this hummus and asked for more.

The chickpeas definitely dominate in this dip, so even cilantro haters will love this hummus.

Another easy recipe I love making with my cilantro is my Avocado and Cilantro Dressing. I put that stuff on almost everything.

But that one has a lot stronger cilantro taste than this humus. If you, like me, are trying to ease someone in your life into enjoying cilantro every once in a while, this hummus is a great place to start.

Ingredients

  • 1 (15.5oz) can chickpeas, drained
  • ½ cup cilantro leaves
  • 1 medium lime, zest and juice
  • 2 tablespoon olive oil
  • 2 cloves garlic
  • ¼ teaspoon cayenne pepper

Instructions

  • Pulse all of the ingredients in a food processor until smooth. Top with additional olive oil. Serve with vegetables and crackers.
