Meyer Lemon Mojito
Easy Meyer Lemon Mojito recipe. This cocktail uses rum, mint leaves and other simple ingredients, this makes a refreshing alcoholic drink.

I'm hunkering down with this Meyer Lemon Mojito and calling it a night. Who's with me?
This recipe is so easy, literally anyone can make it. All you need are the following 5 ingredients:
- fresh mint
- white rum
- lemon juice
- simple syrup
- club soda
That's it!
Lately, I have been enjoying having a Screwdriver at the end of the week. Or the beginning of the weekend. Same thing? Or is that very different.
Anyways, this week I wanted to switch it up. And since I had rum on hand, I thought... why not? Let's make a drink with what I have in the fridge.
I almost always have lemons in the fridge, and mint has seriously been one of my biggest obsessions lately, this drink was everything I wanted.
So cheers to the end of a long week! And a tall drink.

Meyer Lemon Mojito
Ingredients
- 3 mint leaves
- 1 tablespoon fresh Meyer lemon juice
- ¼ cup white rum
- ¼ cup simple syrup
- ¼ cup club soda
- ice
- mint sprigs
Instructions
- In a cocktail shaker, muddle the mint leaves and the lemon juice.
- Add in the rum, simple syrup and ice. Shake well.
- Fill a highball glass with ice. Pour in the mojito. Top with mint sprigs and lemon slices, if desired.
