Hey guys! I made a recipe with protein powder again!
Honestly, I am finding every excuse to bake or make something different with this protein powder I bought. It tastes amazing, but I can’t drink it by itself mixed with water. I just can’t. It clumps, and overall it just doesn’t mix well in liquid.
Last week it was these peanut butter and chocolate protein bars. This week, I was craving cookies. So here we go.
I think peanut butter cookies was my first recipe I ever made. It is just so accessible to a young person wanting to use the oven for the first time.
Growing up on peanut butter, I would always look at the label and see a “super easy peanut butter cookie recipe” on the back. With only 3 ingredients, I would bake the peanut butter cookie recipe almost every week. I think that is where my baking addiction began.
But as a food blogger, it seems like I need to reinvent the way I make cookies. I can’t just make plain old peanut butter cookies, I need to make peanut butter chocolate chip cookies, chia seed peanut butter oatmeal cookies or peanut butter pretzel chocolate chip cookies.
I almost forgot how good a plain old peanut butter cookie tastes. Almost.
This recipe is like your basic plain peanut butter cookie recipe, but with a twist. An extra scoop (or two) of vanilla whey protein powder and you have a peanut butter cookie that you can take with you to the gym. Or to work. Or whenever you are craving a peanut butter cookie.
And as a quick update, I have been using my gym membership more often now! I have been going before work every other day these past couple of weeks, and I am surprised at how much additional energy I have throughout the day.
And with these peanut butter protein cookies in tow, I have a nice reward for after!
Peanut Butter Protein Cookies
Ingredients
- 1/2 cup vanilla protein powder
- 1 large egg
- 1/2 cup granulated sugar
- 1 cup peanut butter, smooth
Instructions
- Preheat the oven to 350°F. Line a cookie sheet with parchment paper or a silicone baking mat and set aside.
- In a medium bowl, mix together all of the ingredients until fully combined.
- Using a medium cookie scoop (or your hands), scoop the batter onto the prepared cookie sheet, making sure the cookies are at least 2 inches apart. Flatten the cookies with a fork to make the criss-cross pattern on top.
- Bake in the preheated oven for 12-15 minutes, or until the cookies begin to brown.
- Allow to cool on the cookie sheets for 10 minutes, then transfer to wire racks to cool completely.

Wow, I can't believe how short this ingredient list is.. and they look just like my favorite Christmastime peanut butter cookies! Can you substitute anything for the sugar I. E. Honey, maple syrup, stevia powder???

Stevia would be the best substitute. Honey or maple syrup could work, but I think it would make the mixture too wet.
