The first time that I tried Morning Glory Muffins was at my local coffee shop years ago.

Normally, I would never gravitate towards something that healthy looking. But that day, they just pulled a fresh batch straight out of the oven. The smell alone forced me to buy some. That was the best (and worst) decision ever. Best because I always knew where to get a good treat to go with my coffee. Worst because.. I always knew where to get a good treat with my coffee, and my wallet paid the price.

But not anymore! Let's make the best Morning Glory Muffins at home for less.

Morning Glory Muffins Ingredients

You just need 14 healthy ingredients to make this healthy morning glory muffin recipe. All you need is:

  • all purpose flour
  • brown sugar (or coconut sugar)
  • baking soda
  • baking powder
  • nutmeg
  • cinnamon
  • salt
  • rolled oats
  • raisins
  • any neutral oil (I usually use avocado oil, but vegetable oil or even melted coconut oil would work too)
  • milk
  • large eggs
  • shredded carrot
  • banana

Equipment

  • muffin pan
  • nonstick spray (I wouldn't recommend muffin liners because these muffins tend to stick to the paper liners)
  • large bowl

Tips

Storage: ​store these muffins in an airtight container on the counter for up to 2 days, or in the fridge for 1 week.

Freeze the muffins. For longer storage, you can freeze the muffins! All you need to do is allow them to cool completely before placing them in freezer bags. These muffins can be frozen for up to 3 months. Once you want to eat them, all you need to do is allow them to thaw at room temperature. Alternatively, you can warm them up individually in the microwave from frozen for around 15-30 seconds, or until warm.

There are so many different variations! I love these muffins because you can add or subtract the mix-ins to your liking. I love switching up the raisins for dried cranberries or golden raisins, or adding unsweetened applesauce instead of the banana. Feel free to make it your own!

Use a different flour for the flour mixture. ​I sometimes like to make them a little more on the healthier side by swapping out the white flour for white whole wheat flour, or just plain whole-wheat flour. If you wanted to make these muffins gluten free, try using gluten free flour.

Add in some fresh fruit. To make it more moist, I love adding in grated apple (a grated granny smith apple is perfect in this recipe), but some orange zest would also be a great addition.

Ingredients

  • 1 ¼ cup all-purpose flour
  • ½ cup brown sugar
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon ground nutmeg
  • 1 ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 cup rolled oats
  • ½ cup raisins
  • 3 tablespoon oil
  • 1 large egg, slightly beaten
  • cup milk
  • 3 medium carrots, shredded
  • 1 medium ripe banana, mashed

Instructions

  • Preheat the oven to 350°F. Lightly spray a muffin pan with cooking spray and set aside.
  • In a large bowl, mix together the flour, brown sugar, baking soda, baking powder, nutmeg, cinnamon and salt. Add in the oats and raisins.
  • Fold in the oil, egg, milk, carrots and banana until fully combined.
  • Divide the batter evenly into the cavities of the muffin pan and bake in the preheated oven for 25 minutes. Allow to cool for 5 minutes in the pan, then transfer to wire racks to cool completely.

Notes

I use avocado oil in this recipe, but any neutral oil works.
