Is anyone really excited about Valentine's Day?

I might sound like the equivalent to a Grinch for Valentine's Day, but I have never really been into the holiday past elementary school. Something about how commercial it is, and how some people feel bad if they don't have a date or boyfriend or whatever. To me, it just feels like an exclusive club that only a certain group of people get invited to, and that just makes me plain uncomfortable.

But I will never object to baking for the occasion!

Although these cookies look more spring than they do Valentines day, check out the hearts I made! And they are pink, right? Which makes them perfect for this pink filled holiday.

So this was the first time I used my cookie press since I got it. On one hand, it makes great designs and makes my cookies look so pretty. But on the other hand, this particular cookie press is so difficult to come apart that I was almost in tears trying to twist it open. Finally, with me holding the end and my boyfriend twisting the front, we got it open so that I could put more shortbread dough into it.

Couples baking, am I right? We are so ready for Valentine's Day.

This shortbread was surprisingly good, despite the fact that my boyfriend thought they looked "not cooked at ALL."

This shortbread almost melts in your mouth, making you want to reach out and grab another one. And another one... and maybe 3 more, until somehow, there are no more cookies left. But they are so fun to make that you won't mind making another batch. That is, unless your cookie press refuses to open.

Melt in your mouth cookie press shortbread cookies for any occasion. So easy to make, and ready in under 15 minutes!

Ingredients

  • 1 cup salted butter, softened
  • ½ cup powdered sugar
  • ¼ teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ cup cornstarch
  • food colouring (optional)

Instructions

  • Preheat the oven to 350°F. 
  • In a medium bowl, cream together the butter, powdered sugar and vanilla until smooth. 
  • Mix in the flour and cornstarch until fully combined.
  • If using, add in the food coloring to your desired shade. Place the dough in your cookie press, and press the cookies out on an ungreased baking sheet.
  • Bake in the preheated oven for 8 to 10 minutes.

    You are fast baking for Valentine's day already! Are the blossoms starting to bloom at Toronto now? I can imagine it must be very pretty and romantic 😀

  2. These cookies are very cute. Definitely remind me of spring. They would look lovely as part of an Easter basket. i have several friends who ae also not into Valentine`s day. They arenLt into baking, but they are definitely into eating the things I make.

  3. That's an interesting recipe, with all that cornstarch. I bet these cookies are super tender. Nice going. Anyway, so glad to hear that you're not into V-Day. I often think I'm the only one. It just seems so forced. I mean, all the sweet things you might do on V-Day you really should just be doing any old day, from time to time, amiright? You shouldn't need a Kay-Jewelers-sactioned day to get to you do it.

  4. I love cookie press cookies, but you are right! Sometimes it is really hard to get the press unscrewed! But they always look so festive!
