This week, we had a long weekend at my school. One of the best things about having a long weekend is that I can sleep in more and have lazy morning breakfasts.

Well, in theory that's how long weekends should go. In reality, our 13 month old baby wakes us up far too early and takes up all of our energy. But I somehow managed to make these Matcha Pancakes this morning.

What you need to make Matcha Pancakes

You don't need much at all!  This uses only ingredients that I always have on hand. All you need is:

  • flour
  • sugar
  • matcha
  • baking powder
  • salt
  • milk
  • eggs

That's it!

Make Ahead

These pancakes, like most pancakes I make, can be made ahead of time and frozen. I actually don't know which way I prefer eating these pancakes: whether it's when they are freshly made, or after freezing. 

The way to freeze these pancakes is to cook them as per the instructions below. Once they are done on the pan, place them on a wire rack to cool completely. Then transfer them to a freezer bag. When you are ready to make the pancakes, simply take them out of the freezer bag and toast them. It creates a crisp exterior and a light and fluffy interior, which I LOVE.

Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 tablespoon matcha powder
  • 2 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup milk
  • 1 large egg

Instructions

  • In a medium bowl, mix together the flour, sugar, matcha, baking powder and salt. Add in the milk and egg. Mix until smooth.
  • Heat a large skillet over medium heat and spray with cooking spray. Scoop ⅓ cup of the batter for each pancake. Flip when the bubbles are covering the surface. Cook the other side until it is golden.
  • Top with yogurt and berries. Enjoy.
