Quick and easy Lemon Asparagus Pasta recipe makes a healthy summer dinner idea. Ready in under 15 minutes, with ingredients you already have at home.

Happy Monday all! I’m not sure I want to say happy Monday necessarily, because I am all booked out for the week! With wedding planning and appointments to go to, I don’t know if I will have time to relax and have time to myself. All of the recipes that I will be showing you this week has been made before I left for Vancouver, just because I knew that I wouldn’t have time to make anything here. And I was 100% right. So all I can do is look at these recipes that I made weeks ago, and wish I was eating it now!

Starting with this Lemon Asparagus Pasta.
I seriously love anything with asparagus. I wish it could be asparagus season all year round! But I need to take advantage of the few months that they are in season. Or at least, being sold in my local store.
Pasta is also my go-to meal. So this combination HAD to happen sometime.

One of my favourite things is combining lemon with pasta. It tastes so fresh and summery, and makes a super easy dish that is usually ready in under 30 minutes.
Remember my lemon garlic pasta? That is usually the pasta I make whenever I am pressed for time, or don’t feel like going out for extra ingredients for dinner. But this Lemon Asparagus Pasta is making me think that this is what I want to eat for those days! Or at least, until asparagus season is over!

One of the things I love about making pasta on the regular is that most of the time, you don’t need a recipe. Heck, after the first time you make this, I don’t think you would need a recipe either!
You definitely don’t need to think too hard to be able to make this pasta. Which is always a plus on a Monday.

Lemon Asparagus Pasta
Ingredients
- 16 oz rotini pasta
- 1 lb asparagus, trimmed and cut into 1 inch pieces
- 1 medium lemon, zested and juiced
- 1/4 cup Parmesan cheese
- 1/2 cup white cheddar
- 1/4 cup salted butter
- 1/4 cup light olive oil
- 1/4 tsp ground black pepper
Instructions
- In a medium saucepan, cook the pasta in salted water for around 7 minutes. The pasta should still be firm. Add in the asparagus, and cook until the asparagus can be pierced with a fork. Drain.
- Add in the lemon juice, lemon zest, Parmesan, cheddar, butter, olive oil and black pepper and mix well. Serve immediately.



This dish is definitely on my meal prep this weekend. So easy and delicous!! I love that the asparagus just cook right in the pot with the pasta 🙂
