Leaving home at 7AM and returning at 7PM is really not agreeing with my dinner planning right now.
When I finally get home, all I want to do is flop down on my comfiest chair, eat brownies while watching Netflix and immediately fall asleep. Because that’s what grown ups do. Which means that my boyfriend is on dinner duty every night.
But even though I get home famished and hangry, I always insist on making dinner at least one day from Monday to Friday. Otherwise I feel like I’m not pulling my weight in our little home.
But since we are both starving by the time I enter the house, I need quick and easy recipes in order to fulfil my promise. And this lemon garlic pasta is a winner. It takes exactly as long as it takes to prepare the spaghetti, which means less than 15 minutes. It is also stupid easy, which makes it almost embarrassing that I’m posting a recipe. But, this week has been so busy that if I don’t post this, I’ve got nothing for you!
But I can’t really complain. Two months left of school, then I have an entire summer of bumming around and travelling the world. And don’t worry, I will take a LOT of pictures!
Need a quick and easy dinner idea? This lemon garlic pasta is ready in under 15 minutes, which makes it a perfect weekday meal.
- 1 lb uncooked spaghetti
- 4 cloves garlic, minced
- 1/2 cup extra virgin olive oil
- 6 Tbsp lemon juice
- 1/2 tsp ground black pepper
- 1/2 cup grated Parmesan cheese
Set a large pot of salty water to a boil. Cook the pasta according to package instructions. Drain and set aside.
In a skillet, cook the garlic in the oil until the garlic is golden and fragrant.
Remove from heat, and mix in the lemon juice and pepper.
Toss the lemon mixture with the cooked spaghetti. Add in the Parmesan cheese, and mix in until fully combined. Serve immediately.
