Homemade Gingerbread Latte recipe. Tastes just like the one you can get at Starbucks but without the steep price tag!
The sun is out. The weather is so nice and yet.. And yet I’m missing all the flavours of the winter. The warm drinks, pumpkin, gingerbread… But who says we can’t have them all year round right?
I’ve got to say, the moment I put this Gingerbread Latte to my mouth, I thought I was at Starbucks, sipping away on one of their drinks on a cold, cold night. This has got to be my new favourite drink, and what’s even better? I can make it at home, oh what joy!

I know, you may find it weird that I’m making all these warm drinks as it approaches summer. I’ve got to say though, summer doesn’t make me any warmer. I am perpetually cold, at no matter what kind of weather.
At the beach, you can spot me so easily. Everyone else is in bikinis..bikini, bikini, wait, what is that big lump of sweaters over there? Oh wait, no, that’s only Cathleen. I PILE them on. So getting me in the water is an even bigger challenge.
And so while everyone else will be at the beach, sipping lemonade and punch, I will be on my porch with a blanket wrapped around me, sipping on this wonderful warm beverage.
What do you need to make this Gingerbread Latte?
This drink is surprisingly easy to make. All you need is:
- corn syrup
- milk
- whipping cream
- brown sugar
- fall spices (ground ginger, cinnamon, cloves)
- strong brewed coffee
That’s it!

Gingerbread Latte
Ingredients
- 1 1/2 Tbsp golden corn syrup
- 3/4 cup milk
- 1 1/2 Tbsp whipping cream
- 1 Tbsp brown sugar
- 1/4 tsp ground ginger
- 1/4 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/4 cup strong brewed coffee
- whipped cream to top
Instructions
- Heat the corn syrup, milk, whipping cream, brown sugar, ginger, cinnamon, and cloves in a medium saucepan on medium heat. Bring to a simmer (do not boil).
- Meanwhile, brew the 1/4 cup of strong coffee. Pour into a mug, and pour the ginger mixture on top. Top with whipped cream.
Notes
- To make this drink vegan, switch the milk for a non-dairy milk and the whipping cream to a vegan version. I find that oat milk works best with this drink.

This I could make my meal, my beverage, and my dessert. It looks delicious and the gingerbread flavor is such a great way to celebrate the season. That touch of whipped cream on top is perfect.
