For all of you who want to have a bowl of oatmeal in the morning but don't like the oatmeal taste or texture, I have a recipe for you!

This Blueberry Muffin Blended Baked Oats is a great way to enjoy your morning oatmeal with a cake-like texture. It uses healthy ingredients, but honestly has the best taste. This tasty breakfast is basically like eating cake for breakfast, it is so good!

​I made blended baked oats for the first time a couple of years ago, and I just can't stop making it. Trust me, this will become your new favorite breakfast.

This healthy blended baked oats is made with under 10 simple ingredients. All you need is:

  • rolled oats
  • baking powder
  • chia seeds
  • ground cinnamon
  • very ripe banana
  • oat milk
  • fresh blueberries
  • sparkling sugar

Equipment

  • small high-speed blender
  • oven-safe ramekin

Tips

What type of oats to use? I always use old-fashioned oats because that is always what I have on hand, but because in this recipe you blend oats, you can use whatever oats you have on hand. Steel-cut oats, quick oats or even instant oats work well.

Don't have a high-powered blender? ​A food processor works just as well. Alternatively, you can replace the oats with oat flour so you don't need to blend it.

Variations

Add in some extra protein. ​A scoop of protein powder goes a long way in this recipe. This way, you can get in a little bit of protein into your breakfast on busy weekday mornings.

Switch out the blueberries. This blueberry muffin baked oatmeal is such a good base recipe, you can replace the blueberries with whatever you like! I personally like chocolate chips or raspberries, but you can use whatever you have on hand!

Ingredients

  • ½ cup rolled oats
  • 1 teaspoon baking powder
  • 2 teaspoon chia seeds
  • ¼ teaspoon ground cinnamon
  • ½ medium banana
  • ½ cup oat milk
  • ¼ cup fresh blueberries
  • 2 teaspoon sparkling sugar

Instructions

  • Preheat the oven to 400°F.
  • In a small blender, add the oats, baking powder, chia seeds, cinnamon, banana and milk. Pulse until smooth.
  • Mix in half of the blueberries into the batter. Pour the batter into a ramekin. Top with the remaining blueberries. Sprinkle with the sparkling sugar.
  • Bake in the preheated oven for 20 minutes.

Notes

  1. Best served when warm out of the oven.
  2. Switch up the blueberries with whatever fruit you have on hand.
