This Birthday Cake Chia Pudding is a simple chia pudding recipe for when you are craving a sweet treat but want a healthier option.
I always have chia seeds in my pantry. Both of my sons have loved chia pudding ever since they were old enough to eat solid food. And since I get bored of eating the same thing after a while, I have been experimenting with different ways to make chia pudding.
If you know me at all (or have been following along with my blog for a while) you will know that I have a major sweet tooth. So of course, todays chia pudding tastes like a dessert, but is actually relatively healthy. This Birthday Cake Chia Pudding is packed with healthy fats and is so easy to make. All you really need to do is leave it in the fridge overnight and then you have a healthy and filling breakfast that kind of tastes like dessert.
Both of my toddlers love it, so that makes it a win in my books. I hope you will love it too!
Birthday Cake Chia Pudding Ingredients
This easy chia seed pudding recipe is just made with 6 ingredients. All you need is:
- milk
- chia seeds
- cake batter flavoring
- maple syrup
- whipped cream
- rainbow sprinkles
Tips
Storage: Store any leftover chia pudding mixture in an airtight container in the fridge for up to 5 days.
Add your favorite extract. In addition to the cake batter flavor, I would suggest adding some vanilla extract to give it that creamy vanilla flavor of a vanilla cake, or some almond extract for a more nutty flavor.
Make it vegan. The only thing in this recipe that would make this recipe non-vegan is the milk and the whipped cream. For the milk, I would choose a creamy option such as full-fat coconut milk or oat milk. As for the whipped cream, there are so many good vegan options. I personally love coconut non-dairy whipped cream.
Change it to your desired texture. If you like a thick pudding (like I do), make the recipe as-is. If you like it to be more runny in nature, add some extra milk.
Stir chia pudding every 10 minutes for the first 30 minutes. This prevents the chia pudding from clumping.

Birthday Cake Chia Pudding
Ingredients
- 1 cup milk
- 1/4 cup chia seeds
- 1/2 tsp cake batter flavoring
- 1 tsp maple syrup
- whipped cream
- sprinkles
Instructions
- In a medium bowl, mix together all of the ingredients and refrigerate. Over the course of the next half hour, whisk the pudding every 10 minutes as it begins to thicken. This prevents the chia seeds from clumping. After the half hour is up, keep refrigerated for 3 hours or overnight.
- Once ready to serve, top with whipped cream and sprinkles.
