Getting ready for berry season with my favourite berry!

Who else gets extremely giddy when they see beautiful fresh berries, for the first time in what seems like years, in their local grocery store?

Judging by my fridge full of berries, you can tell that I was a little too excited.

Whenever I bought berries when John was in the house, he would always eat them all before I got a chance to bake with them.

Which is fine, I guess. Eating berries is better than my typical snacks of chocolate and... well. More chocolate. 

But that just meant that I couldn't share the berries with you guys. 

Share them in the form of a recipe I mean. Unfortunately, we are not yet at the point where we can reach through the screen and share actual food.

But this season? I have already made these Raspberry Cream Cheese Bars AND some raspberry muffins. With some leftover to snack on. I had no idea how many raspberries John was eating until I had them all to myself.

I might even have enough for another raspberry recipe!

These bars have been my breakfast and snack all week. I have one container in the fridge, and a secret container in the freezer.

Since I live alone, the only reason I consider the other one "secret" is because I put it in the back of my freezer to hide it from myself.

Yet, since I know where it is, I have also been dipping into my "secret" stash too. 

These taste just as good straight from the freezer as they do from my fridge stash. I think I might need to make another batch before I move next month!

Raspberry Cream Cheese Bars Ingredients

  • unsalted butter
  • brown sugar
  • flour
  • salt
  • raspberry jam
  • cream cheese
  • white sugar
  • egg
  • lemon juice
  • vanilla
  • fresh raspberries

Ingredients

Shortbread Layer

  • 1 cup unsalted butter, softened
  • ¼ cup brown sugar, packed
  • 2 cups all-purpose flour
  • ½ teaspoon salt

Raspberry Cream Cheese Layer

  • ¾ cup raspberry jam
  • 8 oz cream cheese, softened
  • ½ cup granulated sugar
  • 1 tablespoon all-purpose flour
  • 2 large eggs
  • 1 tablespoon lemon juice
  • ½ teaspoon vanilla extract
  • 1 ⅓ cups fresh raspberries

Instructions

  • Preheat the oven to 350˚F. Line a 9x13 inch baking pan with aluminium foil. Spray with cooking spray and set aside.
  • In the bowl of a stand mixer, beat the butter on high until light and fluffy. Add in the brown sugar and mix until fully combined. Mix in the flour and salt.
  • Press the shortbread layer on the bottom of the prepared baking pan and bake for 20 minutes, or until light brown. Allow to cool slightly.
  • Spread the jam over slightly cooled shortbread layer.
  • In a medium bowl, beat the cream cheese with a hand mixer on high until light and fluffy. Add in the sugar and 1 tablespoon flour. Mix in the eggs, lemon juice and vanilla until fully incorporated.
  • Pour the mixture over the crust and sprinkle with the raspberries.
  • Place in the preheated oven and bake for 25-30 minutes, or until set. Allow to cool at room temperature for around 1 hour, then transfer to the fridge to cool for at least 2 hours.
  • Cut into bars, and store in a tupperware container in the fridge or freezer.

    I do the hidden container too! And that way when I do run into the dessert it's like a special surprise 🙂 These cream cheese bars look so fabulous, and are perfect to use up all teh fresh berries. And they'd be great with other fruits too
