Well, yeah.. Maybe something. And that something is almost always baking. And one of my most recent obsessions in the field of baking is making banana bread. And since the Peanut Butter Cup Banana Bread that I made a few weeks back disappeared so quickly, I decided to make another peanut butter banana bread.
This time, featuring glaze.
Since I wanted this banana bread to last longer than the Peanut Butter Cup Banana Bread (I’m still dreaming about it, it was so good) I made two. But then I couldn’t decide on how to glaze the bread..So many decisions!
I prefer the glaze spread all over the top version. That way, I get glaze with every bite. I think the glaze was the best part of this bread. While this bread was really good, I’ll still be dreaming of my Peanut Butter Cup Banana Bread. It’s hard to try to improve on a good thing.
Peanut Butter Banana Bread with Peanut Butter Glaze
Easy Peanut Butter Banana Bread with Peanut Butter Glaze recipe. The glaze hardens to create a delicious complement to the loaf.
Ingredients
Bread
- 1 1/4 cup all-purpose flour
- 1/2 cup whole wheat flour
- 6 Tbsp granulated sugar
- 6 Tbsp brown sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/4 tsp ground allspice
- 1/3 cup creamy peanut butter
- 4 edium ripe bananas, mashed
- 2 Tbsp canola oil
- 2 large eggs
- 1/2 tsp vanilla extract
Glaze
- 1/3 cup powdered sugar
- 1 Tbsp milk
- 1 Tbsp creamy peanut butter
Instructions
- Preheat the oven to 350˚F. Lightly spray a loaf pan with cooking spray.
- Bread: In a medium bowl, mix together the flours, sugars, baking soda, baking powder, salt, cinnamon and the all spice. Make a well in the centre of the mixture.
- Put the peanut butter in a microwave safe bowl and microwave for around 30 seconds, or until melted. In a medium bowl, combine the banana, oil, eggs, vanilla and peanut butter until fully combined.
- Pour the banana mixture into the flour mixture. Mix slowly until just combined.
- Pour the batter into the prepared pan and bake for 50 minutes, or until a toothpick inserted comes out clean.
- Let cool in the pan for 20 minutes, then remove to cool completely on a wire rack.
- Glaze: Melt the peanut butter in a small bowl, and whisk in the powdered sugar and milk. Drizzle the glaze over the cooled bread.
