Chia seed pudding. You either love it or hate it.
It’s the texture, right? Slimy, cold.. But I think it’s delicious.
Ever since I have made my matcha and vanilla chia seed pudding, I have been eating chia seed pudding left, right and center. Waiting to take pictures of the pudding seems like a punishment to me, because I want to eat it all in one sitting.
But to all of you who hate the texture, hate the taste, but KNOW that it’s good for you and WANT to like it, I have the recipe for you.
I firmly believe that my food processor can do everything. Don’t have a pastry blender? Use a food processor. Want to make a smoothie and lost your blender? Use the food processor! Hate chia seed pudding? No problem, USE YOUR FOOD PROCESSOR!
Now in this recipe, I am hiding two ingredients that many people can’t deal with. Chia seeds and prunes. Sounds like a weird combo, no?
But I’m telling you, it’s not! Hiding ingredients in a chocolate concoction of any kind (like my prune brownies) is always the way to go.
Top this Chocolate Peanut Butter Creamy Chia Pudding with granola? (Perhaps some pecan cranberry granola?) Droool… This pudding won’t last the week.
Chocolate Peanut Butter Creamy Chia Pudding

So…food processor you say, aye?
Haha, I do believe you, because this looks wonderful and almost fluffy! I used whole chia seeds in my chia pudding and I quite liked that too. This however, wowser!
Is this recipe for one or two people? For some reason I aaaalmost suspect you ate all off it, sneaky! S'what I would've done anyway 😀

That´s a lovely idea on how to use chia seeds. I sprinkle it every morning on top of my cereal, but that´s a great idea on how to use it in a different way!

Dear Cathleen, I think that prunes or raisins give cakes a wonderful texture so why not the pudding!
I am sure this is a satisfying, healthy and delicious dessert or snack.
I agree about the food processor it is an essential. I have never owned a microwave and of course don't miss it, but I certainly could not do without the food processor.
Have a beautiful Easter holiday.

I keep hearing how great chia seed pudding is, Kathleen, but still haven't got around to it. Must do that!
Love the idea of adding peanut butter. Happy Easter!

Hi Cathleen, sounds really good actually, love dried dates in desserts, they do so much for the flavor, I bet prunes are the same. As for chia seeds they are such a great little seed, love them. Lovely recipe, thanks for sharing!
Sarah
This looks PERFECT, going to give this a go very soon! Thanks so much for the recipe.

Mmmm, had this for breakfast yesterday, and it was SO good! Changed the recipe a tiny bit, but not enough for the flavours to differ. Posted it up on my blog today:

Thanks again Cathleen 😀 I love how the prunes (or dates..which I used) adds a thicker texture to it. I only used four dates, but might add a couple more next time like you did ^ ^ x
