Healthy Strawberry Muffins made with olive oil. This is a great recipe to make as a nut free snack to bring to work, or a quick and easy grab and go breakfast idea.
I love strawberries. Love love love. With a capital L. The color, the flavor, the look of them. Can’t get enough. But of course, when I get strawberries, I can’t stop myself. I need to make me some strawberry roses.
I used to work at a bubble tea shop where I had to make crepes, and I would decorate them with strawberries shaped as roses, and load on the whipped cream and the chocolate syrup. Needless to say, those who were on a diet didn’t approve of these, but they ate them none the less. Something about these roses makes everything all that much more inviting.
Weirdly I wasn’t all that wild about this muffins, but everyone else LOVED them. They were gone by the early evening. And it wasn’t like I made only 6 or something, I made quite a bit (since I’m always making somewhat small muffins. I like small things :D)
I just love strawberries so I go a little carried away and bought 3 packs of them, and I don’t know what to do with all of them! I guess I’m going to be baking again soon.

What you need to make Strawberry Muffins
These muffins use pantry essentials, plus strawberries. All you need is:
- olive oil
- milk
- egg
- salt
- baking powder
- sugar
- flour
- strawberries

Strawberry Muffins
Ingredients
- 1/4 cup olive oil
- 1/2 cup milk
- 1 large egg
- 1/2 tsp salt
- 2 Tbsp baking powder
- 3/4 cup granulated sugar
- 1 3/4 cup all purpose flour
- 1 1/4 cup strawberries, cut into cubes
Instructions
- Preheat the oven to 375˚F. Line muffin pan with paper liners
- In a medium bowl, whisk together the egg, oil and milk
- In a large bowl, combine the flour, salt, baking powder and sugar. Slowly add the wet ingredients, mixing until fully incorporated. Fold in the strawberries.
- Pour the batter into the prepared muffin pan, and bake for around 25 minutes, or until toothpick inserted comes out clean
These muffins would be ideal for breakfast! We have an abundance of fresh berries right now and this is the perfect way to put them to good use!

Our strawberries and raspberries have finally come in in our garden. I’ve been wanting to make a few baked goods with them this week and these muffins would be perfect for breakfast with a cup of tea!

I struggle so much with the healthy and nut free combination! I used to make great healthy mini-muffins with almond flour for my toddler, but his preschool is nut-free now, so I can’t send them anymore, sigh. He loves strawberries, so I’m sure he’d love to find one of these in his lunchbox!

I have yet to find someone who doesn’t like strawberries..except my dad, but he grew strawberries as a kid in his back yard, and nothing can compare to those strawberries!
What a delicious way to use strawberries. I really like that you used olive oil as the fat in the recipe. We use LOTS of olive oil. I bet these smell delicious as they’re baking and they’d make a great treat or a side with my coffee. Great recipe.
